Overnight Lasagna recipe in the 4/14
newsletter. I have been hesitant to try
a lasagna recipe where the noodles are
not cooked, as I have had friends have
disastrous experiences, but I will give
your recipe a try soon. Have you tried
freezing it after you let it set for 24
hours, or freezing it and then letting
it thaw for 24 hours before baking it? I
often keep a lasagna in the freezer for
the times, when we have unplanned dinner
guests and I have limited time to
prepare a meal for them. Robbie IN

lot of catfish left from his last trip.
Although its good, I'm tired of fried
catfish. Does anyone have some

Minted Orzo Pilaf
Orzo is a
small, rice-shaped pasta, made bright
and savory here with fresh mint and
chicken broth. 8 servings, about 3/4
cup each
6 cups reduced-sodium
chicken broth 1 tablespoon
extra-virgin olive oil 1 large
onion, diced 2 cups orzo (I use
Ronzoni #47 or Barilla) Freshly
ground pepper, to taste 1/3 cup
chopped fresh mint
Bring broth to
a simmer in a large saucepan over medium
heat. Meanwhile, heat oil in a large
deep skillet over medium heat. Add onion
and cook, stirring frequently, until
softened, about 5 minutes. Add orzo and
cook, stirring constantly, until lightly
toasted, 3 to 5 minutes.
Add 1
cup simmering broth to the pan. Cook,
stirring constantly with a long-handled
spoon, until most of the liquid has been
absorbed, about 1 minute. Adjust heat as
necessary to maintain a simmer. Continue
cooking and stirring, adding broth 1 cup
at a time, until orzo is tender but
still firm, 15 to 20 minutes total.
Season with pepper, stir in mint and

Copycat Recipes
No Hassle Breadmaker Bread (Gluten Free)
Wet Ingredients 3 eggs 1-1/2
cups warm water 1/4 cup oil
Dry Ingredients 1-1/4 cup white rice
flour 1 cup potato starch or
arrowroot starch 3/4 cup bean flour
1/2 cup tapioca starch 2-1/4 tsp
yeast 2 Tbsp sugar 1 Tbsp xanthan
gum 1-1/2 tsp salt
Mix first
three liquid ingredients into a large
bowl. Filter the rest of the dry
ingredients into a different bowl, until
they are thoroughly mixed.
Now
mix both bowls together until well
blended. Pour all this into the bread
maker. If your bread maker has a "short
cycle" option, use select that option to
make your bread.
Add additional
warm water if dough is too dry. Allow to

Baked Sweet Potato Chips serves 2-4
2 medium sweet potatoes, peeled
1 tablespoon vegetable oil 1/2
teaspoon coarse sea salt Pepper to
taste
Heat oven to 400°F. Cut
sweet potatoes into very thin slices. In
large bowl, toss potatoes with oil, salt
and pepper. Place potatoes in single
layer on 2 ungreased cookie sheets
(slices can touch but not overlap).
Bake 10 to 15 minutes, rotating
cookie sheets once, until edges are
crisp but potatoes are still soft in the
center. Cool 5 minutes; remove from
cookie sheets to cooking parchment
paper. Cool completely (chips will
become crisp as they cool).
Tips:
Use a mandoline to slice the sweet
potatoes to get the most even, thin
chips. Keep an eye on the chips as they
bake. They can take a few minutes more
or less, depending on how thin they are

This is an old standby for a quick
dinner using only one pound of ground
beef. It's one of our favorites.
Mazetti
In a large skillet brown 1 lb. ground
beef, 1 diced onion, and 1 bell pepper
diced. Brown in it's own fat and pour
off allthe fat you can after browned.
Add 1 T. Chili powder, 1 t. garlic
salt (I use garlic powder since we don't
use salt).
Spread 1 package thin
small soup noodles on top of browned
meat mixture.
Mix 1 can tomato
soup, 1 can mushroom soup and 1 can of
water. Pour this over the soup and meat.
DON'T STIR IT!
Cook covered for
25 minutes being careful not to burn it.
Add 1 C. grated cheese and cook 5
minutes longer. (I have to cook mine at
medium low to keep from burning.)
FYI You can find the soup noodles
in the Mexican canned foods area at
Wal-Mart and I saw them at Aldi's for

Pies and Dessert Recipes
Last month, I was getting a filling
replaced at my dentist. While he was
filling my tooth he was talking to his
assistant about ordering another kit so
he could make more King's Ranch Chicken.
I couldn't believe what he was saying
about how good this kit was and his
assistant agreed and said she wanted one
when he ordered. As soon as I could
talk, I told them I couldn't believe
they were using a kit to make King's
Ranch. The assistant thought it was a
fairly new recipe, and I told her my
Mother had passed away about 10 years
ago and she had made it all the time for
us, 'back then'. I told them I'd send
them her recipe, it wasn't just
something I had off the net. It was her
original recipe, that had come from
Rotel. This is her recipe. Enjoy
BTW, the assistant emailed a couple of
days after sending the recipe and she
had made it for her husband and he
declared it was a keeper. She said it
was better than the kit!
King
Ranch Chicken
2 C. chicken (or
chunks of chicken breast)MOL
6
oz. tortilla chips, broken or crushed
3/4 C.onion, diced 1/2 C.green
pepper, diced 1 t. chili powder 1
C. milk 1 can cream of mushroom soup
1 can cream of chicken soup 1 can
Rotel (partially drained) 1/2 lb.
sliced mushrooms 1/2 lb. shredded
cheddar cheese
Put crushed
tortillas chips in 2 qt. casserole or 9
X 13 pan. Add chicken to the dish
covering the chips. Blend all the other
ingredients except the cheese. Pour over
the chicken and tortillas, then top with
the cheese. Bake @350 degrees for 40

Another recipe for an easy quick dinner.
Chicken (beef) Enchiladas Fast
2 large cans chicken breast or 1
1/2 lb browned ground beef if you want
beef instead. 1 onion, chopped 1
16 oz. shredded cheddar cheese 1 10
oz. package corn tortillas 1 or 2
cans of chopped green chilies 2 cans
cream of mushroom soup 1 8 oz. sour
cream
Mix meat, onion and half of
the grated cheese together. Spread a
couple of tablespoons of this mixture on
each tortilla and roll as you go. Place
the rolls in a 9 X 13 dish. For the
sauce, mix soups, sour cream, and
chilies.
If you like chilies, you
can put one can in meat mixture and one
in the sauce or just use one in the
sauce. Pour the sauce mixture over the
rolled tortillas. Sprinkle the remaining
cheese over tortillas. Bake at 350* for
30 minutes. Jae, Central OK

Pot Holes
1c. Soft butter 4 eggs 1 tsp.
vanilla 1-1/2 c. Sugar 2c. Flour
1 can Pie filling
Cream softened
butter, sugar, vanilla. Add eggs and
flour.Spread in a jelly roll pan. Cut
squares into crust about 12-15. Spoon
pie filling on top of each square.
Bake at 350 degrees for 30-35
minutes or until goldern brown. Cool
slightly then sprinkle with powdered
sugar. I also like to let it cool
completely then drizzle cream cheese

Chocolate Chip Cookies or
Bars 1 box of yellow
or white cake mix, 2 eggs beaten, 1
stick melted butter, 2C chocolate
chips. Mix together and bake in 9X13
pan on 350 for 20 min. When cooled,
cut into squares. Spray the pan with
cooking spray for easy cutting and

This has been a favorite at our
house for many years, and is quick
to prepare, even on a busy day.
Taco Rice
1 lb. lean ground beef 1
onion, chopped 1-1/2 cups salsa
(I used mild) 1 can (8 oz.)
tomato sauce 1 chicken bouillon
cube (or 1 tsp. instant bouillon)
1-1/2 cups Minute Rice
Garnishes: chopped tomato
sour cream shredded Cheddar
cheese sliced pitted ripe olives
tortilla chips
Brown
beef and onion in skillet. Add
salsa, tomato sauce and bouillon.
Bring to full boil; cover. Reduce
heat and simmer for 5 minutes.
Meanwhile, prepare rice as
directed on package. Serve beef
mixture over rice and top with
desired garnishes. Makes 4
servings.
NOTE: we like to
scoop it with the tortilla chips and
eat it that way, and we use all the
suggested garnishes. Judy (in

Jello Salad Recipes
This is
for Faye who asked for a recipe for
a Pork and Bean salad.
I use this and it is good. You may
use Miracle Whip if you like or use
mayonnaise and you can add any
seasonings you would prefer. You can
use a can of baked beans for
variety. I also sometimes add some
sweet pickle relish if the notion
strikes me. I find that using grape
tomatoes and cutting them lengthwise
is better than using chopped
tomatoes, but you can certainly use
chopped tomatoes if that is what you
want or happen to have on hand. I
really don't have a recipe, I just
kind of play it by ear so to speak
when I make this. Hope it is what

Has anyone ever
baked chicken legs using corn flake
crumbs?
If so directions please and result.

Spinach Cheese Bake
3, (10 oz) pkg frozen chopped
spinach 3 beaten eggs 1/4 c.
all purpose flour 1 tsp seasoned
salt 1/4 tsp ground nutmeg 1/4
tsp. ground black pepper 2 c
creamed cottage cheese 1 c
shredded swiss cheese 1 c
shredded cheddar cheese.
Cook
spinach. Drain. Combine eggs, flour,
seasoned salt nutmeg and pepper in a
bowl. Mix in cottage cheese,
cheddar, swiss and spinach. Pour
into buttered 1 1/2 quart casserole
and bake 50 to 60 minutes at 325

crunch pie!
Chef Pierre
sells a frozen unbaked lemon crunch
pie which is delicious, but I want
to make my own! Calling out to all

Watergate Salad
4-6 servings
1 package
(4-serving size) Jell-O Pistachio
Flavor Instant Pudding & Pie
Filling 1 can (20 ounces) crushed
pineapple in juice, undrained 1
cup miniature marshmallows cup
chopped nuts (I like pecans) 1
8-ounce container thawed Cool Whip
Whipped Topping
Stir pudding
mix, pineapple with juice,
marshmallows and nuts in large bowl
until well blended. Gently stir in
whipped topping. Bren in North

Cauliflower Tater Tots
1 12 ounce bag frozen
cauliflower
1/3 cup grated Parmesan Cheese
salt, pepper, onion powder (to
taste)
Cook cauliflower,
covered, in microwave for 6 minutes.
Pour off water and let stand until
cool. Rice the cauliflower in a food
processer, or potato ricer, tend
towards the smoother texture side
rather than coarse. You can place
the cauliflower in the center of a
smooth kitchen towel, and twist to
removethe water, the more the
better. You can always add a few
drops as needed.
Roll into
approx. 1.5″ balls and drop into the
Parmesan. Form into tots by
flattening the tops. If the mixture
is still too moist and falls apart,
work a little of the Parmesan into
the tot, and then roll the formed
tots into the Parmesan once again,
to coat.
Place tots on a
greased cookie sheet and freeze for
30 minutes prior to baking to help
tots hold their shape. At this point
it’s good to note that you can
freeze them longer or make these
ahead of time. Simply place in a
freezer bag after the initial
chilling period and store for up to
a month.
To bake: Preheat
oven to 400 degrees Fahrenheit. Bake
for 10 minutes, rotating tots every
five minutes or so for even
browning.
Serving
Suggestions: Stuff some of the
unbaked tots, with a cube of Chedar
Cheese, and then bake. Serve with
The Beef Chili, or Nacho Cheese, use
Low Carb versions to hold the carbs
down. See: the Beef Chili, and the
American Cheese Sauce recipes.
Makes about 30 tots. One serving is
