Lemon
Chicken with Mushrooms
This is for Bill, who requested recipes
using chicken breasts in the 1/15
newsletter. AT times I have added either
fresh or frozen cut up broccoli or
asparagus to the skillet. Robbie IN
Lemon Chicken with Mushrooms
1/2 cup butter 8 ounces sliced
mushrooms 2 tablespoons fresh lemon
juice, about 1 lemon Salt and pepper
to taste 1 large clove garlic 2
to 3 pounds chicken parts or chicken
breasts
Melt butter over medium
low heat in a heavy skillet; sauté
mushrooms until tender and golden brown.
Add lemon juice, salt, garlic, and
pepper; bring to a boil. Add chicken;
bring to a boil again. Reduce heat,
cover, and simmer for about 30 to 40
minutes, turning frequently. Can be
served over rice, if desired.
Chicken should be tender and juices will
be clear. Serves 4. Robbie IN
