Spicy Groundhog Cookies
Feb. 2 is Groundhog Day in Punxsutawney, PA. If it is
sunny and the groundhog sees his shadow, there will be
more weeks of winter. If it’s cloudy and no shadow,
Spring is coming.
There is a souvenir shop
that sells groundhog-shaped cookies made with groundhog
cookie cutters that you can buy at Punxsutawney Phil’s
Official Souvenir Shop. You can even buy Groundhog Brew
Coffee from Nicholas Coffee in a groundhog mug. And
there are chocolate groundhogs and lollipops and
groundhog barbecue sauces. You can buy the cookies at
gailsladylocks.com and use them to adorn a Groundhog
Sundae. The cookie stands on a square of ice cream and
“sees” its shadow of chocolate sauce
(GroundhogStuff.com).
Spicy Groundhog Cookies
2 c. flour 1/2 t. salt 1 t. baking powder
1/2 t. baking soda 1 t. ground cloves 1 t. ground
ginger 1 1/2 t. cinnamon 1/2 c. soft butter 1
c. sugar 1/2 c. molasses 1 egg yolk Currants or
raisins 1 egg, slightly beaten
Sift flour,
salt, baking powder, baking soda & spices together. Set
aside. Cream butter & sugar together until fluffy. Blend
in molasses & egg yolk. Stir in flour mixture & mix
well. Form into a ball. Wrap in plastic wrap or wax
paper. Chill overnight. For ease in rolling, work
w/small amounts of dough at a time, topped w/wax paper.
Roll dough 1/8 in. thick. Remove wax paper. Cut out
cookies w/lightly floured cutter. Place cookies on
greased baking sheet. Brush w/ slightly beaten egg.
Decorate by giving each groundhog a currant or
raisin for an eye. Bake 8-10 min. in preheated 350 oven.
Cool slightly before removing from cookie sheet. Makes
12 - 15 large groundhogs or 3-4 dozen small cookies. Put
cooled cookies in sealed container w/ slice or 2 of
bread to soften, if desired.
