1 whole potato for each person to be served, peel or not
1/2 whole onion per person
garlic powder

Put the rest of sauerkraut on top of roast. Put potatoes on top of roast. Peel onion , cut onion in half place also on top of roast.

Put lid on cook 6-8 hours on low. The roast is very moist and the kraut becomes very mild. The roast does not pick up the sauerkraut flavor. But it is grand! I cook this about 3 times each month and nothing is ever left. I cook for 4.

Cast Iron Skillet Ratatouille Recipe
A classic comfort dish, made with squash and eggplant in an herbed red pepper and tomato sauce. Delicious simplicity that cooks in a cast-iron skillet

1 1/2 small eggplants
1 red bell pepper
3 small zucchinis
3 small yellow squash

3 cloves of garlic
1/2 medium yellow onion
1 red bell pepper
1 - 15 oz. can of diced tomatoes
3 tbsp. olive oil
1 tbsp. lemon juice
1 tsp. sea salt
1/2 tsp. pepper
1 tbsp. dried oregano
1 tbsp. red pepper flakes

Preheat the oven to 375 F. Add the ingredients for the sauce into a blender and blend until smooth.

Save 1/4 of the sauce for later and pour the rest into the cast-iron skillet. Spread around to smooth it out.

Wash all of the veggies and slice them very thin – less than 1/4

Start arranging the slices in a spiral around the skillet, alternating between veggies. When the skillet is full, drizzle the remaining sauce over the top of the veggies.

Lay a piece of parchment over the top of the skillet and bake for 1 hour.

My hubby is a big meat and potatoes man, so I'm always looking
for different ways to prepare potatoes, and this one is really a
favorite. Is a great way to use leftover mashed potatoes too.

Parmesan Potato Balls Recipe

2 cups leftover mashed potatoes
1/4 cup grated Parmesan cheese
1/2 of 3 oz. pkg. cream cheese, softened
1 tbsp. butter
2-1/2 tsp. dry onion soup mix
Milk, if necessary
Pepper, to taste
1 egg, beaten
1-1/2 cup cornflakes, coarsely crushed

In a bowl, combine mashed potatoes, Parmesan cheese, cream cheese, butter, soup mix and pepper, mixing well. Add 1 to 2 tbsp. milk, if mixture seems too dry. Shape into 8 balls and dip in beaten egg and roll in crushed cornflakes. Place on greased baking sheet. Bake at 400 for 15 minutes, or until hot and crisp.

Hi Nancy and all Landers,
I work for our local elections ( plus my school crossing job) and I want to share a wonderful salad one of our ladies brought to our pot luck. When I ate this salad I would have sworn there were small candy bars in it but there wasn't - it was jumbled up pretzels. She called it a Pretzel Salad so I will too.

Pretzel Salad Recipe

1 cup crushed pretzel sticks - 1/2 cup white sugar - 1/2 cup melted butter Mix crushed pretzel sticks, white sugar and melted butter together. Spray a  cookie sheet with Pam and spread pretzel mix onto the cookie sheet in nice layer. Bake at 400* for 7 minutes. When cool break into small pieces and set

8 ozs. Cream Cheese, softened and 1/2 cup Powdered sugar
Then fold in 20 oz can crushed pineapple(juice too) and 16 ozs. Cool Whip. An hour before serving add pretzel mix to cream cheese/pineapple mix.

I also added cut up green grapes for color but you don't need to. You can also add chopped nuts if you want.

Needless to say there was none left at our potluck. Any leftovers need to be refrigerated. Enjoy

You can use any brand salsa, taco seasoning, beans or crescent rolls. Since it is from the Pillsbury site they want you to use their products. You can also substitute cooked turkey or ground beef for the chicken.
