Spinach Salad with Sesame Dressing Recipe

4 c. torn fresh spinach
1/2 small red onion, sliced and separated into rings
1 c. sliced fresh mushrooms

Toss together in salad bowl. Pour Sesame Dressing over and toss gently. Makes 4 servings.

Sesame Dressing
1 tsp. sesame seed
1 clove garlic, minced
2 tsp. cooking oil
2 Tbsp. vinegar
1 tsp. honey
1 tsp. soy sauce
1/8 tsp. pepper

Cook sesame seed and garlic in hot oil in a small skillet for 1 minute. Remove from heat and stir in rest of ingredients. Cool slightly.

Spinach and Blueberry Spinach Salad
Makes 5-8 Servings

1 package (10 oz) fresh spinach, torn
1 package (4 oz) Blue cheese, crumbled
1 cup fresh Blueberries
1/2 cup chopped almonds
raspberry vinaigrette

Combine all ingredients. Can use raw, unsalted whole almonds and chop them.

Spinach and Cashew Salad
Makes 4 Servings

1 lb. spinach
1 head lettuce
6 oz. cashews

1/2 c. sugar
1 tsp. salt
1 tsp. dried mustard
1 tsp. grated onion
1/4 c. white vinegar
1 c. oil
1 tsp. celery seed

Mix sugar, salt, mustard, onion and vinegar slowly; add oil and celery seed. Chill dressing. Add dressing at last moment and toss. Cashews may be added on each serving on in advance on whole amount.

Spinach Grape Salad
Makes 4 Servings

1 lb. spinach
1 c. red grapes, halved
1 apple, diced
1/3 c. dry roasted peanuts
2 Tbsp. chopped green onion
1 Tbsp. toasted sesame seed
favorite oil and vinegar dressing

Tear spinach into bite size pieces. Toss with grapes, apple, peanuts, green onion and sesame seed. Toss with dressing to coat well.

Marinated Zucchini Salad
Makes 8 servings.

6 small zucchini, thinly sliced (about 1-1/4 lb.)
1/2 c. chopped green pepper
1/2 c. diced celery
1/2 c. diced onion
1 (2 oz.) jar diced pimiento, drained
2/3 c. vinegar
1/3 c. vegetable oil
1/2 c. sugar
3 Tbsp. white wine vinegar
1/2 tsp. salt
1/2 tsp. pepper

Combine zucchini, green pepper, celery, onion and pimiento in a medium bowl and set aside. Combine remaining ingredients in a jar; cover tightly and shake vigorously. Pour marinade over vegetables; toss gently. Cover and chill 8 hours or overnight. Serve with a slotted spoon.

Easy Zucchini and Squash Salad
Makes 4 servings

1 large zucchini
1 large squash
1/4 c. Italian dressing

Dice squash and zucchini. Add all ingredients together. Chill and serve.

Sweet and Sour Zucchini Salad
Makes 8 servings

1/2 pkg. onion soup mix
1/2 c. tarragon vinegar
3/4 c. sugar
1 tsp. salt
1 tsp. pepper
1/3 c. oil
2/3 c. cider vinegar
3/4 c. chopped green pepper
3/4 c. chopped celery
2 medium carrots, shredded
7 small zucchini, shredded

Pour tarragon vinegar over soup mix and set aside. Combine sugar, salt, pepper, oil, cider vinegar, green pepper, celery and carrots. Add soup mixture and stir well. Add the zucchini; stir again. Chill several hours or overnight. Drain before serving.

Zucchini Tomato Salad
Makes 2 Servings

1 large tomato, coarsely chopped
1 small zucchini, thinly sliced
2 Tbsp. sliced green onions
1 tsp. snipped fresh basil leaves or 1/4 tsp. dried basil, crushed
2 Tbsp. light vinaigrette
2 lettuce leaves
2 Tbsp. crumbled Feta cheese or shredded part-skim Mozzarella cheese

In a medium mixing bowl combine tomato, zucchini, green onions, basil and light vinaigrette. Toss lightly to mix. Line 2 salad plates with lettuce. Divide tomato mixture between plates. Sprinkle each serving with half of the cheese.

Hi, i am Emma in Texas and I need to find some cajun recipes thanks in advance.

A neighbor told me about a decorating frosting recipe, that uses a dry cake mix added to the usual ingredients. She lost the recipe, so is there anyone out there who might have this recipe. She says this frosting has a wonderful flavor and taste, and can be used to decorate cakes also.

I was a lucky one to buy a GT Xpress 101 at a garage sale.. It did come with a manual, but I would like to know if anyone has any low fat/low calorie type recipes to use with the machine. Would appreciate your help. Thanks!

I was wondering if anyone had a recipe for A&P Spanish Bar Cake.

Hi Nancy and all you Nancylanders :) I replied to a request for weight watcher crock pot recipes and I decided to summit one every now and then as I got a ton of them. This one is really good and lots of different ways to serve it.

Santa Fe Chicken

1 (15 ounce) can black beans, rinsed & drained
1 small bag frozen sweet corn (or 2 cans, rinsed & drained)
1 cup bottled chunky salsa
6 skinless chicken thighs (or 6 skinless chicken breasts- see tips below)
1 (8 ounce) package cream cheese (low fat is fine), cut into chunks
1 cup shredded cheddar ( I use fat free cheddar)

In a slow cooker, mix beans, corn and 1/2 cup salsa. Top with chicken and pour remaining salsa over the chicken. Cover and cook on HIGH for 3 hours, or until chicken is tender and cooked throughout.

Remove chicken to a cutting board and cut into bite-sized pieces. Return chicken to slow cooker along with cream cheese. Stir and let cream cheese melt into the mixture to create a creamy sauce.

For serving: You can serve the chicken & sauce over rice with a sprinkle of cheddar cheese on top. Or you can serve these as tacos with cheese and a couple of taco fixings such as lettuce and tomato.

This is a great breakfast bread, brunch, or dessert. I like to bake it in 3 mini loaves to freeze for a small special treat on the spur of the moment gift for unexpected occasions. It is a good size for small families.

Breakfast Bread

2 cups all purpose flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
2 eggs
1 cup mashed ripe bananas
1/3 cup canola oil
1 cup grated carrots
1/2 cup chopped pecans

Combine flour, sugar, baking soda, salt, cinnamon. In a small bowl whisk eggs, bananas, oil.

Stir into dry ingredients until just moistened. Fold in carrots and pecans. Pour into a well sprayed loaf pan, 9 inches x 5 inches. Bake at 350 degrees for 55-60 minutes or till tests done with toothpick in middle. Lightly spread with butter on top. Cool at least 10 minutes before removing from pan. Cool on wire rack. This freezes well.

Sharon was wanting crock pot recipes that made an entire meal in the 5/3 newsletter. I am not sure if these will work for her, as it appears she may be on weight watchers. I no longer know where I obtained the recipes. I have substituted 5 spice powder for the spices listed in the first recipe with good reviews from the family. I mentioned previously that I received a giant bottle of 5 spice powder, so have been trying it in various recipes.

Chicken and Sweet Potatoes Crockpot
Serves 4

8 boneless, skinless chicken thighs
1 teaspoon salt - I omit this
1/8 teaspoon cayenne pepper
1 teaspoon paprika
1 teaspoon curry powder
1/2 teaspoon ground ginger
3 sweet potatoes, peeled and cubed
1 onion, chopped
1 cup peach preserves OR apricot preserves
3 tablespoons apple cider vinegar
1 tablespoon low-sodium soy sauce or fish sauce
1/2 cup chicken broth or water
2 tablespoons cornstarch

Sprinkle chicken with salt, cayenne pepper, paprika, curry powder, and ginger. Place sweet potatoes and onions in 3-1/2 quart slow cooker and top with chicken.

Top with peach preserves, vinegar, and soy sauce. Cover and cook on low for 6-8 hours until chicken is thoroughly cooked and sweet potatoes are tender when pierced with fork.

Combine chicken broth and cornstarch and mix well. Add to slow cooker. Cover and cook on high 10-15 minutes until sauce is thickened 4 servings

Bacon Chicken Broccoli Supreme

1 (3 lb) bag frozen, skinless chicken breasts
1 lb. bacon- Regular or turkey
1 bag (lb) broccoli florets
4 cans sliced potatoes, drained - I use fresh potatoes.
2 cans cream of chicken soup or other cream soup

Wrap each skinless breast with 2 pieces of bacon, place in bottom of crockpot, add bag of broccoli, sliced potatoes and top with 2 cans of the chicken soup, just smeared on top. Cover and cook on low for 5 to 6 hours. Can substitute asparagus or mixed vegetables for the broccoli.
