Black-eyed Pea and Chicken Salad Recipe
Makes 6 Servings

3 (16 oz.) cans black-eyed peas
2 (12 oz.) cans chunk chicken
3/4 c. chopped celery
3/4 c. sweet red bell pepper
1/2 c. chopped small green onion top (using some of the green)
1/3 c. minced cilantro
1/2 c. Italian dressing
3 Tbsp. Dijon mustard
2 Tbsp. Italian seasoning (sage, oregano and thyme)
1 tsp. seasoned salt or to taste
1 (2 oz.) jar sliced pimento

Combine black-eyed peas, chicken, celery, red pepper, green onions, cilantro, Italian seasoning, salt and pimento. Add Italian dressing and mustard. Toss well. Cover and chill in refrigerator.
