Apple Streusel Muffins Recipe

2 cups all-purpose flour
1 cup sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/4 teaspoons cinnamon
2 large eggs, beaten
1 cup dairy sour cream
1/4 cup butter, melted
1 cup finely diced apples
1/4 cup sugar
3 tablespoons flour
1/4 teaspoon cinnamon
2 tablespoons butter

Stir together 2 cups flour, 1 cup sugar, baking powder, baking soda, salt and 1 1/4 teaspoons cinnamon; set aside. Beat together eggs, sour cream and 1/4 cup butter; add to dry ingredients with apples. Stir just until moistened. Fill well-greased muffin tins two-thirds full. Combine 1/4 cup sugar, 3 tablespoons flour, 1/4 teaspoon cinnamon and 2 tablespoons butter. Sprinkle on top of muffins. Bake at 400 degrees for 20 to 25 minutes.
Makes 18 muffins.
