I don't have a recipe for the hominy fritters fried like pancakes but by changing the internet search description to "hominy griddle cakes" the search will bring up 100s if not thousands of recipes for pancake-like hominy griddle cakes. Dorothy can check them out and find one close to her grandmother's. Hope this is helpful.

Mary J's Chicken Tetrazzini Recipe

7 oz. thin spaghetti
8 oz. sliced fresh mushrooms
6 large chicken breasts
2 c. sour cream
1 onion, diced
1/2 c. margarine
2 cans of Cream of mushroom soup
grated Parmesan cheese

Cook chicken with water and salt. Remove bone and skin. Cut into bite-size pieces. Saute mushrooms and onions in butter. Cook and drain spaghetti. Mix all together with sour creamand soup and put into baking dish. Sprinkle with Parmesan cheese. Bake at 400 degrees for 40 minutes.

Mary J's Spaghetti Pie Recipe

6 oz. spaghetti
2 T. margarine
2 beaten eggs
1/3 c. grated Parmesan cheese
1 c. cottage cheese
1 lb. ground beef
1 small jar spaghetti sauce
2 oz. shredded mozzarella

In large kettle cook spaghetti according to package directions. Stir butter into spaghetti. Add beaten eggs and Parmesan. Form spaghetti mixture into a crust in a greased 10-inch pie plate. Spread cottage cheese on top. Cook ground beef, drain, and add spaghetti sauce. Pour over cottage cheese. Bake at 350 degrees for 20 minutes. Sprinkle cheese on top. Bake 5 more minutes until cheese is melted. Cut into wedges.

Mary J's Stuffed Zucchini Recipe

2 medium zucchini
1/2 pound ground beef or bulk Italian sausage
1/4 cup chopped onion
1 garlic clove, minced
2/3 cup seasoned bread crumbs
1/3 cup milk
1/8 tsp. dill weed
1 cup spaghetti sauce
1/2 cup shredded cheddar cheese

Cut zucchini in half lengthwise. Scoop out pulp, leaving a 1/4-in. shell. Chop pulp;set pulp and shells aside. In a skillet, brown mat, onion and garlic; drain. Add pulp, bread crumbs, milk and dill. Spoon into zucchini shells. Place in a greased 2-quart baking dish. Top with spaghetti sauce; sprinkle with cheese. Cover and bake at 325 for 30 minutes or until zucchini is tender.
Makes 2 servings.

Rhubarb and Strawberry Meringue Pots Recipe

A tasty, light and fluffy low-fat treat

450g rhubarb, cut into 4cm/1˝in chunks
100g golden caster sugar
grated zest of 1 orange
1 tbsp strawberry conserve
2 eggs, separated

Preheat the oven to 180C/ Gas 4/fan oven 160C. Put the rhubarb in an ovenproof dish, sprinkle over 50g/2oz of the sugar and the orange zest and stir together. Cover and bake in the oven for 35-40 minutes until tender.
(Alternatively, you can cook the rhubarb with the sugar and zest in the microwave for 10 minutes on full power, stirring halfway through the cooking time, until just tender.)Remove the rhubarb from the oven and allow to cool slightly. Stir in the conserve then the egg yolks. Divide the rhubarb mixture between four 175ml/6fl oz ramekins. Put on a baking sheet and cook in the oven for 10 minutes until lightly thickened.
While the rhubarb is cooking, whisk the egg whites until stiff. Sprinkle over half of the remaining sugar and whisk again. Gently fold in the rest of the sugar. Pile the meringue on top of the rhubarb to cover it completely and swirl the top. Return to the oven for 10 minutes until the meringue is puffy and golden. Serve immediately.

I made this recipe yesterday, and it was very good. It was more like a side dish than a soup, but easy to make and tasty. I will make it again, and may also use it for a side dish to take to pot luck dinners. Someone was wanting to know the smart point for recipes, and there are 68 smart points in this whole recipe. For my husband and myself, we would have about 8 servings, some people might have more or less servings. Arlene/Mo.

French Onion Soup Casserole Recipe

2-3 tbsp. butter
3 large sweet onions or 4 med. white or yellow
2 cups shredded Swiss cheese (8 oz.)
1 can cream of mushroom or chicken soup, undiluted
2/3 cup milk
1 tsp. soy sauce
8 or so slices of French bread

Slice onions and try not to cry. With this many onions, its hard. Melt butter in a saute pan over medium heat, and add onions. Saute onions until clear, a little brown is okay. In a sauce pan, heat soup, milk, and soy sauce, stirring to blend. Pour soup mixture over onions and stir gently to mix. Layer onions and 2/3rd of cheese in a 2 qt. casserole pan. Top with bread slices. Bake at 350 degrees uncovered for 15 minutes. After 15 minutes, push the bread slices under the sauce, and top with remaining cheese. Bake 15 more minutes to brown the cheese.

Spinach Salad Recipe

1 bag (10 oz.) spinach leaves
2 cups sugar snap peas or pea pods
2 cups sliced strawberries
1/2 medium red onion, cut into thin wedges
1/2 cup Planters Sliced Almonds, toasted
2/3 cup Kraft Catalina Dressing

Place all ingredients except dressing in large bowl. Add dressing; toss lightly.

Round Out The Meal: Serve this flavorful side salad with a serving of your favorite lean meat and a whole-wheat roll for a well-balanced meal.

Egg McMuggin' Recipe

1/2 cup fat-free liquid egg substitute (like Egg Beaters Original)
One wedge
The Laughing Cow Light Original Swiss cheese, cut into pieces
1-1/2 oz. (about 3 slices) extra-lean ham, chopped
One-half slice light bread (40 - 45 calories and at least 2g fiber per slice)
1 tbsp. shredded fat-free cheddar cheese

Toast bread and cut into cubes. Spray a large microwave-safe mug lightly with nonstick spray. Add bread cubes, egg substitute, cheese wedge pieces, and ham, and stir. Microwave for about a minute. Stir gently, and then top with shredded cheese. Microwave for another 30 - 45 seconds, until scramble is just set. Stir and enjoy!
Makes 1 Serving
Per Serving (entire mug): 174 calories, 3.25g fat, 1,081mg sodium, 9g carbs, 1g fiber, 2.5g sugars, 25g protein -- POINTSR value 4*

This is one I've taken to church suppers in the past and was well received.

Key Lime Cheesecake Bars Recipe

3 cups finely ground graham crackers
1/4 cup sugar
1 1/2 sticks melted butter
8 oz. pkg. softened cream cheese
2 eggs
14 ozs. Condensed Milk
2/3 cup key lime juice

Line a 9-by-13-inch baking dish with foil, leaving a 2-inch overhang on two sides; coat the foil with cooking spray. Preheat the oven to 350 degrees F

Mix graham crackers with sugar and melted butter. Press into the prepared pan; bake 10 minutes. Let cool completely

For the filling, beat 8 ounces softened cream cheese with 2 eggs until smooth. Beat in one 14-ounce can sweetened condensed milk and 2/3 cup Key lime juice.
Spread over the crust; bake until the edges are set but the center is still loose, about 25 minutes. Let cool, then chill until set.

Oma's Old Fashioned Rice Pudding Recipe

6 cups milk
3/4 cup long grain rice
1 cup heavy cream
3/4 cup sugar
3 egg yolks, beaten
2 tsp. Vanilla
1/4 tsp. Salt

Rinse medium glass saucepan with cold water(do not dry). Combine milk, rice and bring to a boil. Reduce heat to medium and cook for approx. 50 - 55 minutes uncovered until rice is tender. Stirring every few minutes so it will not scorch. In a small bowl combine heavy cream, sugar, egg yolks, vanilla and
salt and set aside. When rice is tender, stir in cream mixture. Heat to a boil, stirring constantly 5-10 more minutes. Remove from heat and pour into a 2 quart serving dish. Sprinkle top with cinnamon and nutmeg. Chill at least four hoursm overnight is best.

Oma's Shrimp Salad Recipe

1 med. tomato (diced)
1 med. bell-pepper (diced)
1 (16 oz) box macaroni noodles
1 sm. jar pimentos
1 c. sweet pickle relish
1 lg. bag popcorn shrimp
1/2 tsp. white pepper
2 c. mayonnaise
dash of salt & pepper

Mix all ingredients together. Chill at least 4 hours.
