Butterscotch Dessert Recipe

2 c. boiling water
2 c. brown sugar
6 T. flour
6 T. butter
1 T. vanilla

1 c. brown sugar
1-1/2 c. flour
1/4 t.sp. salt
1/4 tsp. baking soda
1-1/4 c. oatmeal - regular or instant
3/4 c. butter

Using filling ingredients, bring water to a boil. In a separate bowl, combine flour and brown sugar, removing any lumps. Add dry mixture to boiling water. Stir until thickened then remove from heat and add butter and vanilla and stir until well incorporated. Set aside. Prepare topping by combining dry ingredients then adding cold butter to mixture with a pastry cutter until well mixed and crumbly. Place 2/3 topping mixture in prepared 8 x 8 inch pan to form a crust. Press the bottom with the back of a spoon or hand. Pour filling mixture over crust and crumble remainder of topping over filling. Bake at 350 degrees for 20 to 25 minutes. Cut into squares when cooled.
