Cauliflower Soup Recipe

3 cups cauliflower, chopped
2 T. shallot, minced
1 rib celery, chopped
6 cups chicken broth
1/2 cup butter
1/2 cup flour
1 cup half and half
1 T. parsley, minced
1/4 t. dried tarragon
1/4 t. white pepper
Salt to taste

In a large saucepan, bring vegetables to a boil in the broth, reduce heat and simmer for 15 to 20 minutes. Drain vegetables. Reserve both vegetables and liquid. Set aside. Melt butter in saucepan over medium heat. Add flour, cook 1 minute, stirring constantly. Gradually stir in vegetable liquid and cook over medium heat, stirring constantly, until thickened and bubbly. Stir in reserved vegetables, half and half, and remaining ingredients. Cook until heated through, but do not boil.
Serves 6.
