Diet Ambrosia Jello Recipe

1 can (8 oz.) crushed pineapple, drain & save juice
2 c. boiling water
1 can (11 oz.) mandarin orange segments, drained
4 oz. Lite Cool Whip
2 sm. or 1 lg. box orange sugar free jello
1 tsp. coconut extract

Stir boiling water into gelatin in large bowl for 2 minutes or until dissolved. Add enough cold water to pineapple juice to make 1 cup of liquid. Stir into jello. Refrigerate until slightly thickened. Use wire whisk to stir in Cool Whip. Refrigerate for a few minutes to re-thicken. Stir extract into pineapple. Stir all the fruit into jello and spoon into a mold. Refrigerate until firm. Unmold and decorate with fresh fruit as desired.
