Diet Cheesecake Recipe

2 envelopes unflavored gelatin
1 c. skim milk
4 eggs (separated)
artificial sweetener to equal 1 cup sugar
1-1/2 T. lemon juice
2 tsp. grated lemon rind
1-1/2 tsp. vanilla extract
1/4 tsp. salt
1-1/2 c cottage cheese (low-fat)
1/2 tsp. cream tartar
1 T. grated lemon rind & grated orange rind for garnish

Crust Recipe:
4 slices white bread toasted & crumbled
1/4 c. diet margarine
artificial sweetener to equal 1 tablespoon subar

In a sauce pan, sprinkle gelatin over milk to soften. Add yolks, mix, and stir over low heat until gelatin dissolves and mixture thickens slightly. Do not boil. Remove from heat. Add sweetener, juice, rend extract and salt. Process cheese in blender until smooth. Add gelatin mixture, cool stirring occasionally until mixture is almost set. Beat egg whites with cream tartar until stiff. Fold into cheese mixture . Spoon into cheese cake crust. Garnish with lemon & orange rind. Chill until set. Makes 4 servings.

Cheese cake crust recipe: Combine all ingredients and cover bottom of 9 inch spring form pan with mixture. Pat into thin crust. Bake at 450 degrees for 10 minutes. Cool and pour cheese cake mixture into crust.
