Marinated Mushrooms Recipe

1 pound small fresh mushrooms
3/4 cup wine vinegar
1/2 cup salad oil
1/4 cup water
1 leaf bay leaf, broken
1 teaspoon fennel seeds, crushed
1/4 teaspoon salt
1/2 teaspoon seasoned pepper
1 clove garlic, pressed
1 tablespoons parsley, minced

Rinse mushrooms quickly or wipe with damp paper towels. Combine the remaining ingredients except garlic and parsley and boil for 5 minutes. Pour over mushrooms and stir well. Add garlic. Cover and refrigerate at least 12 hours. Stir or turn occasionally. Sprinkle with parsley, drain and serve.

Coleslaw Salad Recipe

1 tsp salt
1/4 tsp pepper
1/2 tsp dry mustard
1/2 tsp celery seed
2 Tbl sugar
1/4 cup chopped green pepper
1 Tbl pimiento
1 tsp instant minced onion
3 Tbl salad oil
1/3 cup white vinegar
4 cups cabbage (1/2 head), shredded

Place ingredients in a large bowl in order listed. Cover and refrigerate at least 3 hours or overnight. Drain before serving.

Spinach Salad Recipe

1 bag "ready to use" spinach
1 can mandarin oranges (drained)
1/2 med. bermuda onion, sliced in rings
1/2 c. broken walnuts
1 bottle "Ken's" Raspberry Vinaigrette

Have salad plates ready. On each, layer spinach, oranges, onion rings, then walnuts. Pour over dressing.

German Potato Salad Recipe

1/2 pkg. sliced bacon
1/2 c. chopped onion
1/4 c. distilled white vinegar
5 T. sugar
1 tsp. salt
8 med. potatoes, peeled
1/4 c. water

Fry bacon and onion. Cut peeled potatoes into chunks and add 1/4 c. water to a large pyrex bowl. Cover with plastic wrap and cook in microwave for 20 - 25 minutes, stirring after half the cookining time when bacon and onion are brown (do not drain bacon fat) add vinegar, sugar and salt. Stir well while heating until sugar disolves. When potatoes are done and tender, add the bacon mixture and stir well.
