Loaded Potato Soup Recipe

8 potatoes, peeled and cubed
1/2 c. butter
1/2 c. all-purpose flour
8 c. milk
1/2 lb. sour cream
1/2 c. shredded cheddar cheese
1/4 c. chopped onion
salt to taste
ground black pepper to taste
bacon bits (optional)

Microwave potatoes 7-10 minutes. While microwaving potatoes, melt butter, add flour and milk. Heat and add sour cream. Mix 1/2 cup cheddar cheese, onions, salt and pepper to taste. Add potatoes, cook medium for about 5 more minutes. Top with bacon bits and additional grated cheddar cheese, if desired.
Makes 8 servings.
