Apple Streusel Muffins Recipe

2 cups all-purpose flour
1 cup sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/4 teaspoons cinnamon
2 large eggs, beaten
1 cup dairy sour cream
1/4 cup butter, melted
1 cup finely diced apples
1/4 cup sugar
3 tablespoons flour
1/4 teaspoon cinnamon
2 tablespoons butter

Stir together 2 cups flour, 1 cup sugar, baking powder, baking soda, salt and 1 1/4 teaspoons cinnamon; set aside. Beat together eggs, sour cream and 1/4 cup butter; add to dry ingredients with apples. Stir just until moistened. Fill well-greased muffin tins two-thirds full. Combine 1/4 cup sugar, 3 tablespoons flour, 1/4 teaspoon cinnamon and 2 tablespoons butter. Sprinkle on top of muffins. Bake at 400 degrees for 20 to 25 minutes.
Makes 18 muffins.

Brown Sugar Cookies Recipe

1/2 c. butter or Crisco
2 c. packed brown sugar
1 tsp. baking soda
1 tsp. baking powder
1/4 tsp. salt
1 tsp. vanilla extract
3-1/2 c. all purpose flour
2 lg. eggs

Cream shortening and sugar. Add 1 egg at a time, beating well after each addition. Add dry ingredients and work well. Divide into 4 parts. Add more flour if needed to make a stiff dough. Work into rolls 5-6" long and roll in waxed paper. Let stand in freezer overnight. Slice thinly and bake at 375 degrees.

Old Fashion Ice Box Cookies Recipe

1 c. butter or margarine
2 c. light brown sugar
2 eggs
3-1/2 tsp. baking powder
1/2 tsp. salt
1 c. chopped walnuts

Cream butter with sugar until light and fluffy. Add the well-beaten eggs and beat until light again. Sift the flour with baking powder and salt and work this thoroughly into creamed mixture. Stir in the walnuts and vanilla. Shape into long rolls 1 1/4" in diameter; wrap in waxed paper and chill at least overnight. The longer you chill the dough, the better the cookies. Slice the dough as thin as possible and bake on greased baking sheet at 375 degrees for about 8 minutes. Yield: 8 - 10 dozen cookies.

Lemon Pudding Cookies Recipe

1/2 c. shortening
1/2 c. sugar
1 (3-1/2 oz.) box of instant lemon pudding mix
2 eggs
1-1/2 c. flour
1/2 tsp. baking soda
1/4 tsp. salt
coconut (optional)
nuts (optional)

Cream shortening, sugar and pudding mix. Beat in eggs. Blend in flour, soda and salt. Drop by teaspoon on ungreased cookie sheet. Bake 10-12 minutes at 375 degrees.

Snickerdoodles Recipe

1/2 c. butter, softened
1/2 c. butter flavored shortening
1-1/2 c. white sugar
2 eggs
2 tsp. vanilla extract
2-3/4 c. all-purpose flour
2 tsp. cream of tartar
1 tsp. baking soda
1/4 tsp. salt
1 tsp. lemon extract
2 tsp. cinnamon

Preheat oven to 400 degrees. Cream together butter, shortening, sugar, eggs, vanilla extract and lemon extract. Blend in flour, cream of tartar, soda and salt. Shape dough into balls. Mix 2 T white sugar and 2 tsp. of cinnamon and roll dough in mixture. Place on ungreased baking sheet and bake for 8-10 minutes.

Egg Tips

To test egg freshness put a egg in a shallow glass of water. A fresh egg will sink and lie flat on the bottom of the glass. A week-old egg will sit near the bottom but will bob slighly in the water. A 3 week old egg will stand on the end. A rotten egg will float to the surface

Fresh eggs' shells are rough and chalky; old eggs are smooth and shiny.

To determine if an egg is hard-boiled, spin it. If it spins, it is hard-boiled. If it wobbles, it is raw.

Frozen Fruit Salad Recipe

1- 8 Ounce Package Cream Cheese
3/4 Cup Sugar
1 Large Can Crushed Pineapple, Drained
1- 10 Ounce Package Frozen Strawberries
2 Large Bananas
1/3 Cup Nuts, Chopped
1 Large Cool Whip

Soften and blend cream cheese and sugar. Mix and add drained pineapple and strawberries (which have been slightly thawed). Slice bananas into mix. Add nuts and cool whip. Pour onto a 9x13 inch pan and freeze. Take out 15 minutes or more before serving.

Grape Salad Recipe

1 c. sour cream
6 T. packed brown sugar
3 c. seedless green grapes
3 c. seedless red grapes
1 c. chopped pecans or walnuts

Combine sour cream and brown sugar, mixing until sugar is dissolved. Combine grapes in large bowl and stir sour cream mixture into grapes. Sprinkle nuts over mixture and serve immediately. Makes 8 to 12 servings.

Spiced Fruit Recipe

16 oz. can sliced peaches in heavy syrup
16 oz. can pear halves in heavy syrup
15 oz. can pineapple chunks in light syrup
1/2 c. orange marmalade
3 in. cinnamon stick
1/2 tsp. ground nutmeg
1/4 tsp. ground cloves

Mix peaches, pears, pineapple, marmalade, cinnamon, nutmeg and cloves with liquid in a large saucepan. Bring to a boil. Reduce heat, cover and simmer 1 hour.

Tang Fruit Salad Recipe

2 lg. cans pineapple tidbits
1 can mandarin oranges
4 med. bananas, sliced
2 sm. boxes instant French vanilla pudding
3 T. Tang
1 c. chopped pecans (opt.)

Drain the pineapple and oranges and reserve the juice. Stir the pudding into the juice until dissolved. Add pineapples, oranges, bananas, and Tang to the pudding mixture until well blended. (Optional:) Stir in the nuts. Refrigerate until ready to eat.

Vegetable Soup Recipe

4 c. cubed raw potatoes
2 c. mixed frozen vegetables
1 (16 oz.) can stewed tomatoes
1/4 tsp. garlic powder
1 c. chopped onions
3 cans (30 oz.) chicken broth
Vegetable cooking spray
1 c. celery, diced

Spray large saucepan with cooking spray. Heat. Add onion, celery and cook until onion becomes transparent. Add remaining ingredients. Bring to a boil. Reduce heat and simmer for about an hour.
Yield: 8 servings.

Loaded Potato Soup Recipe

8 potatoes, peeled and cubed
1/2 c. butter
1/2 c. all-purpose flour
8 c. milk
1/2 lb. sour cream
1/2 c. shredded cheddar cheese
1/4 c. chopped onion
salt to taste
ground black pepper to taste
bacon bits (optional)

Microwave potatoes 7-10 minutes. While microwaving potatoes, melt butter, add flour and milk. Heat and add sour cream. Mix 1/2 cup cheddar cheese, onions, salt and pepper to taste. Add potatoes, cook medium for about 5 more minutes. Top with bacon bits and additional grated cheddar cheese, if desired.
Makes 8 servings.

Cauliflower Soup Recipe

3 cups cauliflower, chopped
2 T. shallot, minced
1 rib celery, chopped
6 cups chicken broth
1/2 cup butter
1/2 cup flour
1 cup half and half
1 T. parsley, minced
1/4 t. dried tarragon
1/4 t. white pepper
Salt to taste

In a large saucepan, bring vegetables to a boil in the broth, reduce heat and simmer for 15 to 20 minutes. Drain vegetables. Reserve both vegetables and liquid. Set aside. Melt butter in saucepan over medium heat. Add flour, cook 1 minute, stirring constantly. Gradually stir in vegetable liquid and cook over medium heat, stirring constantly, until thickened and bubbly. Stir in reserved vegetables, half and half, and remaining ingredients. Cook until heated through, but do not boil.
Serves 6.

Sausage and Cabbage Meal Recipe

2 Granny Smith apples, divided
1/2 c. onion, sliced thin
2 T. water
1/2 tsp. each salt and pepper
1 lb. smoked sausage, cut on diagonal
6 c. shredded cabbage
2 T. butter
1 T. vinegar
2 T. parsley (optional)
prepared mustard

Core and shred apples. Combine with cabbage and onion. Saute mixture in butter for 5 minutes, stirring frequently. Stir in water, vinegar and seasonings. Pierce sausage with fork and place over apple mixture. Cook, covered for 10 minutes or until cabbage is barely cooked and sausage is heated. Serve with mustard.

Stuffed Pork Chops Recipe

6 pork chops, 1 inch thick
2 T. margarine
2 T. onion, finely chopped
1/4 tsp. ground sage
1/4 tsp. crushed dried basil
1 T. fresh parsley, chopped
1 1/2 c. small dry bread cubes
1/4 C. dry onion soup mix
1/2 C. water

Cut pork chops along the bone, about halfway through, then cut toward outside to make a pocket. Melt margarine; add onion, sage, basil, parsley. Saute onion until golden, then toss with bread cubes. Stuff mixture into pork chop pockets. Brown chops in small amount of margarine. Place in 9x13 inch baking dish. Sprinkle dry onion soup mix over chops. Pour 1/2 C. water over chops and cover. Bake in 325� oven for 1 hour or until chops are tender.
Makes 6 Servings

Fried Green Beans Recipe

2 (14 ounce) cans green beans
3 slices bacon
1 med. onion

Cut up the bacon and put in a skillet on medium heat. Chop the onion and put it in the skillet and fry with the bacon until bacon is done. Turn heat down to low. Drain green beans and then add the drained green beans to the skillet. Mix well, cover & simmer for about 30 minutes.
