Oma's Hummingbird Cake Recipe

3 c. flour
2 c. sugar
1 tsp. salt
1 tsp. soda
1-1/2 tsp. cinnamon
3 eggs, beaten
1-1/2 c. oil
1-1/2 tsp. vanilla
8-oz. can crushed pineapple, drained
2 c. chopped bananas
2 c. chopped pecans

Combine flour, sugar, salt, soda and cinnamon. Add eggs and oil; stir until moist. Stir in vanilla, pineapple, bananas and pecans. Bake 350 degrees for 25-30 minutes.

Oma's Seven-up Cake Recipe

3 oz lemon gelatin
1 lemon cake mix
4 eggs
3/4 cup oil
10 oz can 7-UP
1-1/2 cups sugar
1 cube margarine (stick)
8 oz can undrained crushed pineapple
2 Tbl flour
2 eggs
3 oz can coconut

Mix cake mix, eggs, oil and 7-UP. Add gelatin and mix more. Pour into 3 - 8" or 2 9" pans. Bake at 325 degrees for 25-30 minutes. Cool and frost.FROSTING: Cook sugar, margarine, pineapple, flour and eggs until thick (about 10 minutes). Add coconut and mix thoroughly. Cool a little before you frost the cake.

Oma's Creamsicle Cake Recipe

1 orange Duncan Hines cake mix
1 sm. box Orange jello, dry
2 Eggs
1/2 c. Oil
1-1/2 c. Water or Milk

1 (12 oz) container of Cool Whip
(extra creamy, the red label)
1 (20oz) can of crushed
Pineapple, drained
1/2 c. Sugar
1/2 c. Orange Juice
1 lg. box of Vanilla Pudding, dry
1 (8 oz) block of cream cheese, softened

Mix all indredients together according to the box directions and pour into a 13x9 pan.bake at 350 degrees. for 30 to 35 minuets. Cool cake before frosting.

Mix Cream Cheese, Orange Juice, Pudding, and Sugar until creamy. Fold in cool Whip and pineapple. Spread over cooled cake.

Pineapple Oatmeal Drop Cookies Recipe

1/2 cup shortening
1 cup granulated sugar
1/4 tsp. cinnamon
1/8 tsp. nutmeg
1 egg, unbeaten
1 cup (8 1/2 oz. can crushed pineapple) undrained
1 cup sifted all purpose flour
1/2 tsp. salt
1/2 tsp. soda
1-1/2 cups rolled oats
1/2 cup chopped nuts

Cream until fluffy shortening, sugar, cinnamon and nutmeg. Add egg and pineapple. Sift flour, salt and soda and add. Add oats and nuts. Bake at 375 degrees for 12-15 minutes.

New Mexico Beef Casserole Recipe

1 lb. ground beef
12 oz. jar chunky salsa
1 c. frozen sweet corn, thawed and drained
3/4 c. mayonaise
1 T. chili powder
2 c. crushed tortilla chips, divided
2 c. (8 oz.) shredded Colby/Monterey Jack cheese, divided

Heat oven to 350 degrees. Brown meat; drain. Stir in salsa, corn, dressing and chili powder. Layer 1/2 each of the meat mixture, chips and cheese in 2-quart casserole. Repeat layers. Bake 20 minutes or until thoroughly heated. Top with shredded lettuce and chopped tomato, if desired.
Serves 6.

Beef and Noodle Casserole Recipe

1 lb ground beef
1/4 c chopped green pepper
1/2 c chopped onion
1/2 tsp seasoned salt
1 (15 oz) can tomato sauce
1/4 tsp pepper
2 c creamed cottage cheese
1 (3 oz) pkg cream cheese, softened
4 oz noodles, cooked

Brown beef, onion and green pepper; drain. Stir in tomato sauce, salt and pepper. Blend cottage cheese and cream cheese til fluffy. Place noodles in buttered 10x6x1 3/4 " baking dish. Cover with cheese mixture; pour meat sauce over all. Bake at 350 degrees for 30-40 minutes.

Beef Stroganoff Recipe

1 lb. round or sirloin steak
2/3 c. water
1 (3-oz.) can sliced mushrooms, undrained
1 envelope onion soup mix
1 c. sour cream
2 T. flour
buttered rice or noodles, cooked

Heat 3 tablespoons oil in skillet. Cut meat diagonally across grain in 1/4 inch wide strips. Brown meat quickly. Add water, mushrooms and liquid and soup mix. Heat just to boiling. Blend sour cream and flour. Add to meat. Serve over rice or noodles. Good with brown rice or noodles.

Pepper Steak Recipe

1 lg. very tender piece of beef steak
1/2 c. soy sauce
1-1/2 T. diced fresh garlic
garlic salt, to taste
black pepper, to taste
1 lg. onion
1 med. bell pepper
1 can mushrooms
1/4 c. cooking oil
2-1/2 T. corn starch
2 c. water
2 c. cooked rice

Cut meat across grain into strips, 1/8-inch thick. In medium size bowl, combine soy sauce, garlic, a little garlic salt, and black pepper. Set aside for at least 30 minutes, but the longer the better not going over about 4 hours. Cut onion and bell pepper in little strips. Heat oil in skillet. When oil is hot, cook meat for at least 10 or 15 minutes stirring constantly. Taste meat. If not tender, cover and simmer for about 30-40 minutes over low heat. Turn up heat and add onion and bell pepper stirring constantly until tender crisp, about 10 minutes. About 5 minutes after adding onion and pepper, add drained mushrooms. Stir until hot. Mix cornstarch and water. Add to pan. Stir until thickened. Serve over rice.

Mary J's Swiss Steak Recipe

1-1/2 lbs. Round Steak, cut 3/4" thick
2 T. Flour
Salt and Pepper, to taste
1 med. Onion, sliced
1 (15 oz.) can stewed tomatoes
1 Carrot, chopped
1 stalk Celery, chopped

Cut round steak into serving pieces. Season flour with salt and pepper. Dredge meat in seasoned flour. Place onions in bottom of crockpot; add meat. Top with carrots and celery and cover with tomato sauce. Cover and cook on low 8 to 10 hours.

There weren't a lot of recipes sent in for the newsletter yesterday. Today more recipes came in to be posted.  Yesterday was spent with friends.  After eating with friends I took the cats in the car to watch the prairie dogs.  Ditto and Little One weren't really impressed with them so we went to watch the ducks instead. I listened to a book from Audible and they watched the ducks. Both Ditto and Little One enjoyed the ducks.They especially liked it when some young children came and fed the ducks. 

Four-Layer Chocolate Dessert Recipe

I grew up on these nutty, chocolatey layered treats. Now I make them for both my mom and myself, since I know she loves them, too.

1 cup all-purpose flour
1/2 cup cold butter
1 cup chopped walnuts, toasted, divided
1 8 ounce package cream cheese, softened
1 cup confectioners' sugar
2 8 ounce cartons frozen whipped topping, thawed, divided
2 1/2 cups 2% milk
2 3.9 ounce packages instant chocolate pudding mix
1 cup semisweet chocolate chunks
Chocolate syrup

1. Preheat oven to 350 degrees. Place flour in a small bowl; cut in butter until crumbly. Stir in 1/2 cup walnuts. Press onto bottom of an ungreased 13x9-in. baking dish. Bake until light golden brown, 12-15 minutes. Cool completely on a wire rack.

2. In a small bowl, beat cream cheese and confectioners' sugar until smooth; fold in one carton whipped topping. Spread over crust. In a large bowl, whisk milk and pudding mix 2 minutes. Gently spread over cream cheese layer. Top with remaining whipped topping. Sprinkle with chocolate chunks and remaining walnuts. Refrigerate until cold.

3. Cut into bars. Just before serving, drizzle with chocolate syrup.
Servings: 15

To toast nuts, bake in a shallow pan in a 350 degrees oven for 5-10 minutes or cook in a skillet over low heat until lightly browned, stirring occasionally.
