Athena's Plantain and Banana Recipes

Marilyn, loved the plantain recipe! Here's another one....

Plantains with Brown Sugar Recipe

1 T. butter
2 T. lemon juice
2 -8 T. unsweetened pineapple juice
2 ripe plantains, peeled and quartered
1/4 cup packed brown sugar
1/2 t. ground cinnamon
Dash ground cloves
3 T. rum
2 cups vanilla frozen yogurt
Stick cinnamon (optional)

In large skillet, melt butter. Stir in lemon juice & 2 T. pineapple juice. Add plantains.
Sprinkle plantains w/brown sugar, cinnamon & cloves. Reduce heat; simmer
for 15 min., adding pineapple juice as needed. Add rum to skillet & cook 2 min. or until thickened. Serve w/ frozen vanilla yogurt. Garnish with stick cinnamon. Serves 4.

Easy Plantain Bake Recipe

4 plantains, with peels
4 cups butter
Pepper, to taste

With a fork, pierce the skin of the plantain. Place on baking sheet and bake at 400 for 1 hr. Remove, pull back peel, & season each w/ butter & dash of pepper. Serve in skins.. 4 servings.

Brennan's Bananas Foster Recipe

1 cup butter
1 cup brown sugar
1/2 t. cinnamon
1/4 cup banana liqueur
4 bananas, cut in half lengthwise, then halved
1/4 cup dark rum
4 scoops vanilla ice cream

Combine butter, sugar and cinnamon in skillet.
Place pan over low heat & cook stirring until sugar dissolves.
Stir in liqueur; place bananas in the pan. When begin to brown, carefully add run.
Continue to cook until rum is hot. Then tip pan slightly, to ignite the rum. When flames subside
lift bananas out of pan & place 4 pieces over each portion of ice cream. Generously spoon warm sauce over top & serve immediately.
4 servings.
