Athena's Pumpkin Recipes

These are the last pumpkin recipes I'll submit unless somebody really wants recipes for cookies, cakes, pies, and other desserts.

Pumpkin Bourbon Shakes Recipe

4-1/2 cartons (14 oz each) vanilla ice cream, softened
2 cups canned organic pumpkin
1 cup milk
1/2 cup bourbon
1/2 cup packed light brown sugar
1/2 t. nutmeg
1/2 t. ground ginger
1 t. cinnamon
Sweetened whipped cream (optional))

Whirl 1/3 ice cream, pumpkin, milk & bourbon at a time in blender until smooth, adding sugar & spices to last batch. Pour into large bowl & stir to combine. Ladle shakes into 8 tall glasses & top each with dollop of cream and a little nutmeg. Serve w/straws. Athena in DE


Caramel Nut Pumpkintini Recipe

4 T. pumpkin spice liqueur ( such as Hiram Walker)
3 T. Irish Cream (such as Bailey's)
3 T. cream or milk
1 T. vanilla vodka (such as Pinnacle)
1 T. amaretto ( such as Disaronno)
Whipped cream
Cinnamon or pumpkin pie spice

Place all ingredients in shaker w/ice. Shake about 10 sec., then strain into martini glass. Top w/whipped cream & dash of cinnamon or pumpkin pie spice.
Makes 1 drink.

Slow Cooker (Creamy) Pumpkin Hot Cocoa Recipe

5 cups skim milk
2/3 cup hot chocolate mix
1/2 cup organic pumpkin
2 t. pumpkin pie spice
1 t. vanilla
Pinch salt

Whisk all ingredients in 4 qt. slow cooker. Cook on Low 2 hrs., stirring occasionally. Top dollop whipped cream.
