Oma's Potato Patties Recipe

2 c mashed potatoes
1-2 tbsp flour
1/2 tsp salt
1/4 tsp pepper
1 egg
1 medium onion, chopped
vegetable oil for frying

Mix all ingredients except oil in medium bowl. Heat 1/4" oil in large skillet. Drop potato mixture by tablespoons into hot oil. Brown lightly on both sides flattening when turning.

Oma's Salmon Patties Recipe

1-14 3/4 oz. can red sockeye salmon
1 egg
10-15 saltine crackers crushed
1 T. lemon juice
1/2 c. diced green pepper
1/2 onion, diced
1/2 tsp. dill weed
small amount of cooking oil for browning

Open can of salmon and remove all skin and cartilage but reserve the juice. Saute green pepper and onion in small amount of oil. In small bowl lightly beat egg. Add cleaned salmon, crackers, lemon, and dill weed. Mix in green pepper and onion. Mix with fork until salmon holds together with ingredients. If to dry add small amount of reserved juice.Make small patties and lightly fry on both sides in small amount of oil till brown, about 8 minutes on each side.

Oma's Zucchini Patties Recipe

1 c. zucchini, grated
1 sm. onion, chopped
1/2 tsp. salt, to taste
1 egg
1/4 c. Bisquick or flour
1/4 c. cheese, grated

Stir zucchini, onion and salt together. Let stand for about 15 minutes, until a little watery. Add egg, Bisquick and cheese. Stir. Fry in hot oil like pancakes. Serve hot.

Sharon's Mandarin Orange and Lettuce Salad Recipe

1/2 c. slivered almonds
3 T. brown sugar
1 head leaf lettuce
1 c. celery, chopped fine
2 green onions
1 (14 ounce) can mandarin oranges

Heat together almonds and sugar till caramelized. Set aside. Tear lettuce and toss with celery, onion, and mandarin oranges. Combine dressing ingredients and shake well. Just before serving toss all together and sprinkle with almonds.

Sharon's Strawberry Salad Recipe

2 c. sour cream
2 c. cool whip
1 small box strawberry jello
1 qt. fresh strawberries
2 c. miniature marshmallows

Mix sour cream, cool whip & dry jello. Blend well. Fold in strawberries and marshmallows. Refrigerate for 2 hours before serving.

Sharon's Chicken and Rice Casserole Recipe

1 (10 oz.) can mushroom soup
1 soup can of milk
3/4 c. uncooked rice
1 envelope Lipton's dry onion soup mix
2 chicken breasts, split in half

Heat oven to 350 degrees. Blend soup and milk; reserve 1/2 c. of the milk mixture. Stir together with remaining milk mixture, rice, 1/8 c. water, and half of the onion soup mix. Mix well. Pour into ungreased baking dish 11 x 7 x 1 inches. Arrange chicken breast on rice mixture. Pour reserved milk mixture over chicken and sprinkle with remaining onion soup mix. Bake covered for 1 hour; uncover and bake 15 minutes mor

Sharon's Biscuit Chicken Pot Pie Recipe

1/2 chopped onion
1/2 cup butter or margarine
1/2 cup all -purpose flour
4 tsp. instant chicken bouillon granules
1 tsp. salt
1/2 tsp. sage
1/4 tsp. pepper
2-2/3 cup milk
2 cups water
4 cups cubed chicken or turkey
2 cups frozen mixed vegetables, cooked and drained
10 biscuits in a can

Cook onion in butter or margarine until tender, but not brown. Blend in flour, chicken bouillon granule, salt , and pepper. Add milk and water. Cook and stir until thickened and bubbly. Stir in chicken or turkey and vegetables; heat until bubbly/Pour into large casserole

Barb's Green Tomato Pie Recipe

3 to 4 c. Diced Green Tomatoes
1-1/4 c. Sugar
1/4 tsp. Salt
3 T. Vinegar
3 T. Flour
3 tsp. Pumpkin Pie Spice
1 tsp. Cinnamon
1 T. margarine

Mix and pour in double crust pie shell. Bake 1 hour at 350 degrees.

Linda's Southwest Zucchini Recipe

3 c. zucchini, sliced
1/2 c. onion, chopped
1 T. oil
1 (4 -oz.) can green chilies
1 tomato, chopped
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. garlic powder
1/2 c. shredded sharp cheese

Saute zucchini and onion in oil for 3 to 4 minutes. Add chilies, tomato and spices, cook for 3 to 4 minutes. Spoon into a serving bowl and sprinkle with cheese.

Jan's Red Cabbage and Apple Dish Recipe

2 T. bacon drippings
4 c. shredded red cabbage
2 c. cubed apple
1/4 c. c. vinegar
1/4 c. water
1/4 c. brown sugar
1-1/4 tsp. salt
1/2 t. caraway seed

Heat drippings and add remaining ingredients and dash of pepper. Cover tightly, cook over low heat, stirring occasionally. For crisp cabbage, cook 15 minutes; for tender cabbage cook 25 to 30 minutes.

Jan's Homemade Butterscotch Pudding Recipe

3 egg yolks,
2 c. brown sugar
8 T. Flour
2 c. milk
3 T. Water
a pinch of salt
4 T. butter
1 tsp. vanilla

In a double boiler, mix egg yolks and milk. Add brown sugar, flour, water and salt. Stir over medium heat until mix thickens. Remove from heat and add butter and vanilla. Pour in serving dishes, cool and enjoy.

Jan's Mandarin Orange Cake with Icing Recipe

1 box white cake mix (not Jiffy)
1 (14 ounce) can mandarin oranges with juice
1/4 cup oil
3 eggs

1 small cool whip
1 small box instant vanilla pudding
1 cup crushed pineapple, drained

Mix first four ingredients together well. Cook 40 minutes at 350 degrees in 9x13 pan. Mix cool whip, pudding and pineapple together and spread on cooled cake.

Jan's Lemon Pudding Cake Recipe

1 C. flour
1/2 C. margarine
1 (8 oz.) pkg. cream cheese
1 C. whip cream, whipped
1 C. powdered sugar
2 pkgs. instant lemon pudding
3 C. milk
Additional whipped cream
1/4 C. nutmeats, chopped and optional

Preheat oven to 350 degrees. Blend flour and margarine well and press into bottom of 9x13 in pan. Bake about 15 to 20 minutes or until light golden brown. Combine cream cheese, whipped cream and powdered sugar. Spread over crust. Combine pudding mix and milk. Beat on low speed of mixer for about 2 minutes. Spread over second layer. Chill. Cover with addition whipped cream. sprinkle with chopped nuts, if desired.

Apple Cinnamon Muffins Recipe

2 c. flour
1 T. baking powder
3/4 tsp salt, or to taste
1/3 c. packed brown sugar
3/4 c. milk
1 egg
1/4 c. butter, melted
1 c. chopped apples
1/4 c. sugar

Grease muffin pan and set oven to 400 degrees. In large bowl, combine flour, baking powder, salt, brown sugar and 1 tsp cinnamon. Make a well in center of flour mixture and add milk, egg and butter. Stir just until ingredients are combined and moistened. Mix in chopped apple. Mount batter high in muffin pan cups. Mix remaining cinnamon with sugar and sprinkle over muffins. Bake 20 minute

Another good turkey recipe!

Gwyneth Paltrow's Cheesy Stuffed Burgers Recipe

1 T. extra virgin olive oil
1/2 cup peeled & finely minced yellow onion
1 T. very finely chopped fresh rosemary
1 lb. ground turkey
1/2 t. coarse salt
1/4 t. freshly ground pepper
1/2 cup coarsely grated cheese of your choice
4 sprouted grain or whole-wheat burger buns

Heat oil in small skillet over med. heat. Add onion & rosemary, cook until soft & sweet, about 10 min. Let mixture cool a bit. Put mixture into large mixing bowl w/turkey, salt & pepper.

Combine ingredients with wooden spoon or hands. Divide mixture into quarters. Cut each quarter in half & form into 2 patties. Place 2 T. cheese on one patty, place other patty on top, inching edges together. Repeat with remaining patties.

Preheat grill to hi. Cook burgers, 5 min. on one side; flip, then cook until burgers are browned & firm about 4 min. Serve on buns with favorite fixings.
Serve 4. 370 cal.

( Note! Hard cheeses like sharp cheddar, Gruyere or Emmentaler ooze less. Burgers
can also be filled with bread stuffing.)

Question for Oma.
Your blackened fish dipped in butter sound so good. You say each filet should be about 8 oz., but what's is the ideal thickness, to keep them from being dry? I'm guessing at least 3/4" thick, but please tell. Thanks.

Marilyn's Cherry Recipes for Barb in OKC.

Martha Joffrion's Welaka Cherry Salad, adapted

8 oz. can crushed pineapple
1 #2 can black sweet cherries (Oregon brand works very well), juice reserved
1 EACH lemon & orange
1 3 oz. box lemon gelatin
Dash salt
1/2 c. boiling water
1/3 c. ice water

Set pineapple to drain, pressing into strainer. Pour cherry juice into a 1 cup measuring cup; add cherries to pineapple. Squeeze juice of lemon & orange into cherry juice; should equal 1 cup. Put dry gelatin & salt into a bowl; stir in boiling water till dissolved. Add ice water, juices, & fruits from the strainer. Mix well & chill till set. Top this with lemon mayonnaise, whipped cream, or Cool Whip if you like. Martha's original recipe called for 2 envelopes plain gelatin & 3/4 c. of sugar; I just used one lemon jello to simplify it. For some nice crunch, add 1/3 c. chopped pecans or walnuts or sliced celery with the fruit. Her recipe was passed on by Frances Wiggins in the Welaka Centennial Cookbook of 1987.


Chunky Cherry Salad Recipe

3 oz. pkg. cherry gelatin....For an interesting variation, try lemon or orange
1 c. boiling water
1 #2 can Royal Anne cherries, juice drained into a 1 cup measure
8 oz. or 1 c. diced peaches, diced pears, or pineapple tidbits, drained
1/2 c. halved or chopped walnuts or pecans
Whipped cream or Cool Whip

Mix gelatin into boiling water. Add enough cold water to cherry juice to make one cup; stir into gelatin. Add to fruits & nuts in an 8 " or 9" container; cover & chill till set. Top to serve, Redi-Whip is easy & delish. I've always used Royal Annes in this, but no reason black cherries wouldn't also be good.

Here are two recipes for Julie. I agree that watermelon is a wonderful treat.

Watermelon Papaya Salsa Recipe

2 c. ripe watermelon, seeded and diced
1 lg. ripe papaya, peeled, seeded and diced
1 lg. Avocado, quartered, seeded, peeled and diced
1/4 c. fresh lime juice
1/4 to 1/2 c. virgin olive oil
1/4 tsp. salt - I omit this
Jalapeno pepper, seeded and minced, to your taste only, or substitute Tabasco
or hot sauce
1/4 c. scallions, green only, diced
1/4 c. chopped fresh mint leaves
Put all ingredients in blender and slightly pulse to combine. Add the Jalapeno pepper to your taste, carefully: the heat will build as it sits. Store in covered container in refrigerator. until ready to serve. Keeps for about 2 days under refrigeration. Makes about Robbie IN


Watermelon Sluch Recipe

4 cups frozen watermelon chunks
1 cup frozen strawberries
apple, white grape, or pineapple juice

The night before, cut a seedless watermelon into 2 inch chunks, freeze in Ziploc bags. The strawberries can be fresh frozen or even the sliced kind with sugar that you buy from the grocery store.
Place frozen watermelon and strawberries in a blender or smoothie maker. Add the juice; enough to cover the fruit. Blend. Can substitute other fruits for the strawberries, such as peaches, blueberries, raspberries.
