Aunt Mary's Pumpkin Recipes

Aunt Mary's Pumpkin Bread Recipe

3 cups sugar
1 cup vegetable oil
4 eggs beaten
1 lb can pumpkin
3 1/2 cups flour
2 tsp soda
2 tsp salt (scant)
1/2 tsp ground cloves
1 tsp (each) nutmeg, cinnamon, and all spice
2/3 cup water

Mix sugar, oil and eggs together. Add pumpkin, then add dry ingredients, then add water stirring just until mixed. Pour batter into 2 greased and floured 9 x 5 inch loaf pans. Bake at 350 degrees for 1 hour.


Aunt Mary's Pumpkin Waffles Recipe

3 1/2 - 4 c. all purpose flour
1/4 c. firmly packed brown sugar
4 tsp. baking powder
1 1/2 tsp. ground cinnamon
1 tsp. ground allspice
1/2 tsp. salt
1/2 tsp. ground ginger
4 lg. eggs, separated
2 c. milk
1 c. cooked pumpkin
1/4 melted butter or margarine

Combine in large bowl flour, brown sugar, baking powder, cinnamon, allspice, salt and ginger. In separate bowl combine egg yolks, milk and pumpkin. Add wet ingredients to dry ingredients, stir until just moistened. Stir in butter or margarine. Set batter aside. Beat egg whites at high speed until soft peaks form. Gently fold into batter. Bake in preheated, oiled waffle iron until crisp. Serve with butter, maple syrup and toasted pecans. Makes 24 4 inch waffles.
