Butter Rich Rolls Recipe

1C.milk or 1/4 cup powder milk and 1 cup water or
“Best I think”, 1/2 cut milk and ˝ cut water
1/2 C. butter, cut into pieces
1/4 C. granulated sugar
2 eggs
3/4 t. salt
4-1/2 C. bread flour
3t. dry active quick-rising or bread yeast

If you want a really soft roll, use the whole cup of milk. I like a little firmer roll, so I use ˝ cut milk and ˝ cut of water.

In glass container in the microwave, heat milk and butter until butter is soft, about 1 minute on high.

Then add eggs and stir until yokes are busted.

Add warm milk mixture, sugar, salt, bread flour and yeast to bread machine pan according to manufacturer's instructions. Select regular cycle and press Start. Check after about 5 minutes to make sure dough is the right consistency, should be sticky but none comes up with your finger when you touch it. If the dough is to dry add a little water, 1 teaspoon at a time, if too dry add a little flour at a time until it is right.

I hardly ever have to make any additions to mine. When cycle gets to knock down after first rising and knead, remove dough from machine. On my Zo I have a program set up so my machine stops.

Divide dough into 36 to 48 pieces. I roll mine out and cut them with a pizza cutter. Grease pan with a little vegetable oil. Place roll in pan and brush rolls with oil, if you want to, allow too rise 30 to 40 minutes in warm, but not hot place, until about doubled in size. In the winter I turn my oven on for a few seconds, just until I start to feel some heat, cut the heat off and leave the light on, works great, most of us don’t keep our house in the 80’s and that’s what you need for bread to rise nicely.

When rolls have risen, bake in per-heated oven at 400 degrees for about 8 to 12 minutes or until as brown as you like.
