Shrimp Martinis with Napa Cabbage Slaw
large fresh shrimp
2 large eggs,
1 cup soft breadcrumbs
1 cup sweetened flaked coconut, toasted
4 cups vegetable oil
Garnish with lime wedges
Peel shrimp, leaving tails
Dip shrimp in egg. Stir
together breadcrumbs & coconut; dredge
shrimp in mixture. Pour oil into Dutch
oven; heat to 375. Fry shrimp, in
batches, over med-hi heat 2 min.
until golden. Drain on paper towels.
Spoon Napa Cabbage Slaw evenly into 8
martini glasses. Top with 3 fried
Garnish, if desired.
1 T. dark sesame oil
cups shredded napa cabbage
1 red bell pepper,
cut into very thin strips
2 T sesame
Whisk together first 3 ingredients in
large bowl. Add cabbage, carrot, pepper,
tossing to coat.
Sprinkle with sesame
