Fae's Sweet Potato Casserole Recipe
(1974)

3 cups mashed sweet potatoes
1 cup granulated sugar
1/3 stick butter (softened or melted)
1/2 tsp. salt
1/2 cup milk (I use 1 %)
2 eggs (beaten well)
1 tsp. butter flavoring
1 tsp. pure sherry flavoring (I use Sauer's) you might not find this, if not use vanilla flavoring

While potatoes are hot, measure 3 cups, and then add butter and sugar. This will melt the butter as well as the sugar, then add other ingredients.

Crunchy topping
1 cup light brown sugar
3/4 stick butter (melted & cooled)
1/3 cup all-purpose flour
1 cup chopped pecans.

Directions
The topping can be mixed anytime, place in plastic bag, sugar, flour and nuts, then pour liquid butter over, mixing well by pressing on the plastic bag. Place on top of the potato mixture, and press down on the topping slightly.
Grease baking dish or spray. Bake approx. 35 min. at 350, If the topping seems to be browning too much, lay piece of foil on top.....or reduce heat if oven is too hot...
This freezes well, or you can halve the recipe...but keeps good in the frig until all eaten.
