Jam n Sherry Plantains Recipe

BDon't know if anyone else loves plantains like we do or not. Another of nature's perfect foods, like eggs & bananas ! If so, here's our newest addition, & it is yummy.

Jam n Sherry Plantains Recipe

2 very ripe & black plantains, halved, then quartered after peeling
Peach or apricot jam or preserves
2 T. butter, melted
1 T. brown sugar
1/2 T. lemon juice, bottled is o.k.
1/2 jigger dry or sweet sherry

Spread each piece of plantain thickly all over with jam & place in one layer in a small baking dish. Melt butter & stir in sugar, juice, & sherry in that order. Pour over plantains & bake at 350 for 30 minutes. Serves 2. EZ to multiply in a larger baking dish. Sweet & yummy & great with chili or spicy enchiladas.

I'm planning to have it again next week with a Mexican baked fish dish & black rerfried beans.
