Tomatoes and Green Beans Recipe

1 pk (8 ounce) frozen cut green beans
1 c chopped tomatoes
1 small onion, sliced, in rings
1 clove garlic, minced
1/4 ts Oregano or basil leaves, crushed

Place green bean box in Microwave to thaw or if using fresh, cook until bright green. In medium saucepan, combine beans with remaining ingredients. Bring to a boil. Simmer for 10-15 minutes or until beans are tender. Can serve topped with fresh cut parsley or basil.

Ginger Carrots with Dill Recipe

2 c sliced carrots (up to 3)
1/4 c green pepper; diced
2 tb minced fresh dill weed
1 tb honey
1 tb butter or margarine
2 ts lemon juice
1/2 ts salt
1/4 ts ground ginger

In a saucepan, cook carrots in a small amount of water until crisp-tender; drain. Add remaining ingredients. Cook over Low heat for 1-2 minutes or until hot.
Makes 4 servings.

Baked Beets with Oranges Recipe

8 lg beets or 12 medium
2 oranges
Salt and pepper

Preheat oven to 350 degrees. Scrub beets and peel them thinly. Grate the zest of 1 orange and juice both oranges.

Layer overlapping slices of beets; sprinkle with grated orange zest, salt and pepper, pour juice over top. Cover and bake alongside the roast for 1 hour or until tender.

Pumpkin Rice Skillet Recipe

3 tb oil
1 md onion, finely chopped
6 c fresh pumpkin, cubed
3/4 c dried apricots, chopped
1 ts salt
3/4 c water
1 c cooked rice

Heat oil in a wide skillet over medium heat. Add onion and cook & stir occasionally, until it begins to brown. Add pumpkin pieces to skillet as you prepare it. Stir to coat. Chop apricots and add to skillet along with salt and 3/4 cup water. Cover and simmer the mixture 15 minutes. Add cooked rice and cook 10 minutes more, or until pumpkin is tender. Stir often as it cooks.

Cabbage AuGratin Recipe

1 head cabbage; shredded
2 eggs; beaten
1 ts celery salt
1/2 ts Salt
1/2 c Milk
grated cheese; to taste
paprika and ground pepperto taste

Steam shredded cabbage 5 minutes or more until still crispy. Put into a buttered casserole. Combine remaining ingredients and pour over cabbage. Sprinkle with grated cheese, paprika and pepper.
Bake for 20 minutes in a 350F degree oven.

Carrot with Almonds Recipe

2-1/2 tb margarine
2 lb carrots, sliced
1/4 c apple juice
1 tb lemon juice
2 tb chives
1/2 c almonds, sliced

Heat margarine in a large skillet. Add carrots & saute over moderate heat, stirring frequently, until tender-crisp & beginning to turn golden, about 10 to 15 minutes. Add apple juice & saute, stirring until it is all absorbed. Stir in the remaining ingredients, then transfer to a serving dish.

Oven Baked Potatoes and Onions Recipe

6 lg Potatoes, quartered
6 md Onions, quartered
1/3 c Vegetable oil
1 ts Black pepper
1 tb Fresh parsley, chopped
1 tb Fresh basil, chopped
1 ts Fresh marjoram, chopped

Preheat oven to 375F. Place potatoes and onions in shallow roasting pan. Combine oil & herbs & pour over the vegetables. Toss & bake, uncovered for 1 hour, or till fork tender. Turn occasionally to prevent sticking.
