Cauliflower with Tomatoes Recipe
1 tb olive oil
2 ripe tomatoes,
skinned, deseeded and quartered
and freshly ground black pepper
fresh basil leaves, torn
cauliflower, cut into florets
basil, to garnish
Heat the oil in a pan and add the onions
and tomatoes. Cook for 1-2 minutes.
Stir in the seasoning and basil and
cook for 1-2 minutes. Meanwhile, cook
the cauliflower in boiling, salted water
for 4-5 minutes until almost tender.
vegetables on a serving plate and
garnish with fresh basil.
