Mary J's Divinity Recipes

3 c. sugar
1/2 c. water
1 c. Karo syrup
3 egg whites
1 c. pecans
1 T. vanilla

Stir sugar, water and Karo syrup over low heat until sugar is dissolved. Let mixture boil until candy thermometer reads 265' or until hard ball when dropped in cold water. Slowly add stiffly beaten egg whites. Beat until mixture loses glossiness and will keep form when dropped by spoonful. Then add pecans and vanilla. Drop by spoonful onto waxed paper and let cool.


Strawberry Divinity Recipe

3 c. Sugar
3/4 c. light corn syrup
3/4 c. water
2 egg whites, stiffly beaten
1 (3 oz.) pkg. Strawberry Jello

Combine sugar, corn syrup and water. Bring to boil, stirring constantly. Reduce heat and cook to hard ball stage (252 degrees), stirring occasionally. Combine beaten egg whites and jello, beat until mixture forms peaks. Pour hot syrup in thin stream into egg whites, beating until candy loses gloss and holds shape. Pour into greased 9 inch square pan. Top with pecans if desired.
Makes 5 dozen pieces.
