Mary J's Old Time Pie Recipes
Here are pie recipes from the files of my aunt. Most of them were cut from magaiznes and posted in a notebook. She also wrote notes to which ones she tried and gave a a 1 to 5 ranking. All of these were from the 50s and had a rating of four or five.

Custard Pie Recipe

1 9-inch) pie crust
4 Eggs
1/2 c Sugar
1/4 ts Salt
3 c Milk
1 ts Vanilla

Preheat oven to 450? Brush unbaked pie crust with egg white, set aside. Scald milk, add sugar, salt, eggs, and vanilla. Pour into crust, bake for 10 minutes, reduce heat to 300? and bake for another 45-50 minutes.

Pumpkin Pie Recipe

3/4 c Sugar
1 tb packed golden brown sugar
2 ts cinnamon
3/4 ts ground ginger
1/4 tssalt
1 c pumpkin (16oz)
3/4 c whipping cream
1/2 c sour cream
3 lg eggs (beaten to blend)
1 (9") pie crust, baked

Filling mix first 6 ingredients together using a whisk to remove all lumps and thoroughly blend., add whipping cream, sour cream and beaten eggs. Pour into 9 inch crust. Bake at 325 F 55- 60 minutes until edges puff and center is almost set. Note; I put a ring of foil around crust edge to prevent over browning the last 15 minutes of baking.

Chocolate Chess Pie Recipe

1-1/3 sticks butter
1 1/2 sq. unsweetened chocolate
1 1/3 c sugar
3 small eggs
1/3 ts salt
1 ts vanilla
1 (9-in.) pie crust; unbaked

Melt butter and chocolate over boiling water. Mix sugar, eggs, salt and vanilla; add to chocolate mixture. Pour into pie shell and bake at 375 deg. for about 35 minutes.

Impossible Cherry Custard Pie Recipe

21 oz cherry pie filling
1-1/2 c milk
1/4 c butter; softened
1-1/2 ts vanilla
4 eggs
3/4 c sugar
1/2 c Bisquick

Heat oven to 400. Grease 10" pie plate. Drain pie filling, reserving syrup. Beat all ingred. except cherries and reserved syrup til smooth, 15 sec. in blender on high. Pour into plate. Spoon cherries evenly over top. Bake until knife inserted in center comes out clean, 30-35 min. Cool 5 min.
Serve with warm reserved syrup and , if desired, sweetened whipped cream.

Pie can be prepared ahead and refrigerated up to 12 hrs. Increase baking time to 35-40 min.

Blueberry Crumble

1 1/2 c. blueberries, fresh or frozen
1/2 c. sugar
1 tbsp lemon juice
4 tbsp butter
3/4 c. flour
pinch of salt

Place berries in a 9 or 10 inch pie plate with half the sugar; sprinkle lemon juice over them. Cream butter. Add remaining sugar, flour and salt. Crumble over berries. Bake at 350 degrees until golden on top. Serve warm or cold.
