Honey Mustard Avocado Bacon Chicken Salad

Dressing / Marinade:
1/3 c honey
3 Tbsps whole grain mustard
2 Tbsps smooth and mild Dijon mustard
2 Tbsps olive oil
1-2 Tbsps Apple cider vinegar (or white vinegar), (OPTIONAL -- to cut through the sweetness)
1 tsp minced garlic
Salt to season
4 skinless and boneless chicken thighs or chicken breasts

For Salad:
1/4 c diced bacon , trimmed of rind and fat
4 c Romaine lettuce leaves , washed
1 c sliced grape or cherry tomatoes
1 large avocado , pitted and sliced
1/4 c corn kernels
1/4 of a red onion , sliced

Whisk marinade / dressing ingredients together to combine. Pour half the marinade into a shallow dish to marinade the chicken fillets for two hours if time allows. Refrigerate the reserved untouched marinade to use as a dressing.
Heat a nonstick pan (or grill pan or skillet) over medium heat with about a teaspoon of oil and sear / grill chicken fillets on each side until golden, crispy and cooked through. (Grill in batches to prevent excess water being released.) Once chicken is cooked, set aside and allow to rest.
Wipe pan over with paper towel; drizzle with another teaspoon of oil and fry the bacon until crispy.
Slice chicken into strips and prepare salad with leaves, tomatoes, avocado slices, corn, onion strips and chicken.
Whisk 2 tablespoons of water into the remaining untouched marinade / dressing and drizzle over the salad. Sprinkle the bacon over the top and season with a little extra salt and cracked pepper (optional). Again this salad is sooo good. From: cafe Delites (Karina@cafedelites.com)

Onion Soup Mashed Potatoes Recipe

2 pounds all purpose potatoes, peeled, if desired, and cut into chunks
2 tablespoons chopped fresh parsley
1 package Lipton Recipe Secrets Onion Soup Mix
3/4 cup milk, heated to boiling
1/2 cup sour cream

In a 3 quart saucepan, cover potatoes with water. Bring to a boil over high heat. Reduce heat to low and simmer 20 minutes or until potatoes are very tender; drain. Return potatoes to saucepan. Mash potatoes. Stir in parsley and onion soup mix blended with hot milk and sour cream.
Serves 8.

Potatoes Au Gratin Recipe

4 to 6 white potatoes
1 onion, sliced in rings
1 cup milk, or half and half
2 tablespoons butter, melted
1 cup shredded cheese
1/2 cup bread crumbs
salt and pepper to taste

Slice potatoes thin. In a greased casserole dish, place a layer of potatoes, onion rings and salt and pepper to taste. Fill the dish to within 1 inch of the top. Pour milk or half and half over potatoes, and spread cheese on top evenly. Mix together the bread crumbs and melted butter. Sprinkle this over the cheese and place dish in a hot 425F oven until potatoes are tender, about 20 or 30 minutes, depending on how deep your dish of potatoes are.
Makes 6 servings.

Sour Cream Potatoes Recipe

1 pound potatoes, pared, diced and parboiled
1/2 pound cheddar cheese, grated
4 tablespoons butter, melted
1 onion, grated or chopped chives or scallions for nice color
1 cup sour cream
1/4 teaspoon pepper
1/2 teaspoon salt

Mix all ingredients together, turn into a casserole dish, bake uncovered at 350F for 45 minutes.
Makes 4 Servings

Fresh Green Beans Casserole Recipe

1 pound fresh green beans
1 tablespoon cooking oil
1/2 cup thinly sliced onion
1/3 cup dry white wine or reduced sodium chicken broth
1/4 to 1/2 teaspoon salt
1/4 teaspoon coarsely ground white pepper
1/2 cup cashew halves
1/2 cup half and half or light cream
1/2 cup soft bread crumbs

Preheat oven to 350F. Cut fresh green beans into 1 inch pieces. Cook covered, in a small amount of boiling water for 5 minutes. Drain and set aside. In a large skillet heat oil over medium high heat. Cook onion, uncovered, in hot oil for 4 to 5 minutes or until golden brown. Slowly add wine or broth, salt, and pepper. Cook for 2 minutes or until liquid is nearly evaporated. Add 1/4 cup of the cashews and the half and half or light cream. Bring to boiling. Reduce heat to medium. Cook, uncovered, for 3 minutes. Stir in cooked green beans. Spoon mixture into a 1 1/2 quart casserole. Top with bread crumbs and remaining cashews. Bake, uncovered, for 25 to 30 minutes or until top browns and mixture is heated through.
Makes 6 servings.

Granny's Navy Baked Beans Recipe

1 pound small navy beans, rinsed
4 1/2 cups water
1/3 cups molasses
1/4 cup brown sugar
1/4 teaspoon cloves
2 teaspoons dry mustard
1/4 to 1/3 pound salt pork, sliced
1/2 teaspoon salt
1 onion, whole

Combine all ingredients in crockpot except for the onion, bury that in the middle. Cover and cook on low for 10 to 12 hours. Stir occasionally if possible. If doing overnight, check in the morning and add a little more hot or boiling water if necessary. Do not double for 4 quart cooker, but ok to double for a 5 quart.

Mushroom Pecan Rice Recipe

1 cup uncooked rice
1/2 teaspoon nutmeg
1 can mushroom soup
1 small can mushroom stems and pieces
3 ounces pecan or almond pieces
1/2 cup butter, melted

Cook rice, rinse and season with nutmeg. In a well greased casserole, layer rice, undiluted mushroom soup, mushrooms and nuts. Repeat layers, ending with nuts on top. Pour melted butter over all. Bake for 20 minutes at 350F.
Serves 6 to 8.

Holiday Buttermilk Pecan Pie Recipe

2-1/2 c. sugar
1 c. buttermilk
2 T. flour
1 T. vanilla
6 eggs
1-1/3 c. coconut
1 c. oleo, melted
1-1/2 c. chopped pecans

Mix all ingredients and pour into 2 unbaked pie shells. Bake at 350 for 1 hour, or until firm.

Holiday Grasshopper Pie Recipe

24 crushed oreo cookies
1/4 c. melted butter
1/4 c. milk
1 tsp. peppermint extract
green food coloring
1 jar marshmallow fluff
2 c. whipping cream

Combine cookie crumbs and butter in bowl, mix well and press into bottom of a spring form pan. (If desired, reserve 1/2 c. crumbs to sprinkle on top as garnish.) Mix milk, extract, marshmallow and a few drops of food coloring. Mix thoroughly. Whip the cream until peaks form, and fold into marshmallow mixture. Freeze for 3 - 4 hours before serving.

Impossible Pecan Pie

1-1/2 c. chopped pecans or walnuts
3/4 c. milk
3/4 c. light or dark corn syrup
1/4 c. margarine or butter, softened
1 1/2 tsp. vanilla
4 eggs
3/4 c. packed brown sugar
1/2 c. Bisquick baking mix

Heat oven to 350 degrees. Grease pie plate and sprinkle pecans in plate. Beat ingredients until smooth, 15 seconds in blender or one minute with hand beater. (Both on high) Pour into plate. Bake until knife inserted in center comes out clean. (50 to 55 minutes)

Holiday Lemon Chess Pie Recipe

4 eggs
1-1/2 c. sugar
1/4 tsp. salt
1 tsp. vanilla
Juice of 1 lemon
5 T. melted butter

Blend all ingredients together and pour into unbaked 9-inch pie shell. Bake at 300 degrees for about 30 minutes.

Millionaire Pie

1/4 c. lemon juice (concentrate)
1 can Eagle brand milk
20 oz. crushed pineapple (drained)
1 lg. Cool Whip
1 cup pecans, nut pieces
(2) 9 inch graham crackers crust

Mix lemon juice, Eagle brand milk, pineapple, Cool Whip and pecans together. Pour into pie crusts.

Raisin Cream Pie Recipe

Baked 9 inch Pie Crust
1 cup raisins, cooked and drained
1 cup sugar
1 Tbs. flour, heaping
1/2 tsp. salt
2 egg yolks
1-1/2 cups whole milk or Half and Half
2 egg whites
2 Tbs. sugar

Mix sugar, flour, salt and egg yolks and milk. Cook until thick. May use a double boiler or watch closely. Add raisins and put into a baked pie crust. Make a meringue by beating egg whites until thick. Add 2 Tbs. sugar gradually. Top pie with meringue and bake at 350 degrees until browned (15-20 minutes).

Nana's Sweet Potato Casserole Recipe

1/4 c. margarine
3 T. brown sugar
3 raw apples, cut and cubed
2 lbs. cooked and peeled sweet potato
1/2 c. pecans
1/8 tsp. nutmeg
1/4 tsp. salt
black pepper to taste

In frying pan, melt margarine, add sugar, cook, stirring to dissolve sugar, add apples, cook 5 minutes or until crisp and tender. Stir constantly. Fold in sweet potato, nuts and seasonings. Serve hot, can be prepared ahead and reheated in casserole dish.

Shirley's Thanksgiving Pea Recipes

Old Fashioned Pea Salad Recipe

1 (14 ounce) can peas (drained)
1 boiled egg (diced)
2 med. dill pickles (diced)
2 slices american cheese (torn into bite sizes)
1 small onion (chopped)

Mix all the ingredients together. Chill in refrigerator until ready to serve.
Makes 4 Servings

Crunchy Pea Salad Recipe

1 (10 oz) pkg frozen green peas
1 c diced celery
1 c chopped cauliflower, chopped fine
1/4 c chopped green onion
1 c sunflower seeds
1/4 c crumbled bacon
1/2 c sour cream
1 c ranch salad dressing
1/2 tsp dijon mustard
1 sm clove garlic, minced

Rinse peas in hot water and drain. Combine peas, celery, cauliflower, onion, sunflower seeds, bacon and sour cream. Mix dressing, mustard and garlic. Pour over vegetable mix, toss gently and chill.

Peas And Onions Au Gratin Recipe

1 (16-oz.) pkg. loose-pack frozen peas and pearl onions
2 T. water
2-oz. cream cheese (1/4 c.)
2 T. milk
1/4 to 1/2 tsp. cracked black pepper
1 clove garlic, minced OR 1/8 tsp. bottled minced garlic
1/2 c. herb-seasoned croutons

In a 1-quart microwave-safe casserole dish, micro-cook the peas and pearl onions with water, covered, using high power for 3 - 5 minutes or until just tender. Drain. Stir in the cream cheese, milk, pepper and garlic. Micro-cook, covered, on high for 2 - 4 minutes or until heated through, stirring twice. Sprinkle croutons on top.
Makes 4 servings.
