Pan Release Recipes from Susie in Indy
Nancy, I came across the recipe for grease and flour pans now that we are baking more. It comes under many names. I have made one for dark or chocolate anything. For the dark bake goods instead of flour I substitute cocoa. Then I have made the following for light or white anything.

Miracle Pan Release or Goop Recipe

1/2 cup flour
1/2 cup oil
1/2 cup shortening

Slightly heat but DON'T completely melt shortening; it should be just soft enough to be able to blend. Mix all three (3) ingredients together and whisk until no lumps remain. Transfer to a clean jar and lit.
Use a pastry brush, wax paper or butter wrapper to sread evenly on pans before baking.

Professional Bakery Pan Grease

1/2 cup vegetable oil
1 cup solid vegetable shortening
1 cup all purpose flour

Mix all together in your kitchen Aid Mixer (or hand held mixer will work too) until it is all smooth and incorporated.

Store at room temperature for up to 2 weeks.
Refrigerate for 5 months
Freeze for 1 year

Mushroom Recipes for Marilyn from Athena in DE

Easy Stuffed Mushrooms Recipe

8 medium mushrooms
1/4 cup butter
1/4 cup chopped onion
1/3 cup dry breadcrumbs
Dash of thyme
Dash of marjoram

Wash and dry mushrooms. Remove stems and chop them. Melt butter in skillet; add onion and chopped stems. Sauté until tender. Add bread crumbs and seasonings.

Fill mushroom caps with this stuffing, piling it high. Place on broiler track and broil 4 inches from broiler unit for 4 minutes.
Makes 4 servings.

This is a delicious mushroom casserole that I serve with Prime Rib.

Mushroom and Cheese Casserole Recipe

2 T. butter
1-1/2 lbs. mushrooms, slice
2 T. flour
1/4 t. dry mustard
1/2 t. salt
1/8 t. pepper
1 cup milk
1 T. pimiento liquor
1 T. chopped chives
1 T. chopped mint
2 T. chopped pimiento
1 cup grated Cheddar cheese
2 T. buttered dry bread crumbs

Melt butter in saucepan; sauté mushrooms lightly. Blend in flour, mustard, salt & pepper. Gradually add milk & pimiento liquor. Cook over medium heat, stirring occasionally, until sauce thickens. Add chives, mint & pimiento. Pour mixture into greased 1 qt. casserole. Sprinkle with grated cheese & bread crumbs. Bake, uncovered, in 325 oven for 30 min. Garnish w/sprig of mint. Makes 6 servings.

Canned Soup Substitute Recipe from Marvis
Especially for any with kidney disease and need to restrict potassium and salt, try this for 1 can of canned soup. Add other ingredients for chicken enchiladas.

Canned Soup Substitute Recipe

2 tablespoons butter
3 tablespoons flour
1/2 cup chicken broth
1/2 cup milk
1/4 tsp. Salt
1/4 tsp.blk. Pepper

Melt butter, add flour , seasoning and liquids till thickened. For the enchaladias add following ingredients after basic soup is thickened.

For verde enchilada seasoning
1 tsp. Cumin
1 tsp.coriander
1/2 tsp. Garlic Pwdr.
1/2 tsp. Chili pwdr.
Small can green chopped chilies

Holiday Appetizer Recipes from Linda in NM

Ham and Pinwheels Recipe

6 (10 inch) flour tortillas
1 (8 ounce) package cream cheese, softened
12 slices deli ham
4 ounces fresh basil
1 cup sun dried tomatoes
12 leaves red lettuce

Spread each tortilla lightly with cream cheese. Arrange two ham slices across the middle of each tortilla. Add a layer of fresh basil, then a layer of tomatoes. Do not place ingredients too close to tortilla edges. Add lettuce; use enough leaf lettuce to cover across the center of each tortilla, with some of the frilly leaf edge hanging over. Starting at one end, tightly roll up each tortilla. Stick toothpicks in four evenly spaced spots of tortilla roll. Place tortilla rolls in a dish, cover, and refrigerate for 2 hours to chill. Slice each roll into four evenly sized sandwiches, and serve as soon as possible.
Makes 24 servings.


Onion Cheese Dip Recipe

1 envelope dry onion soup mix
2 cups sour cream
3/4 cup shredded cheddar cheese
3 tablespoons chopped pimento
1/4 teaspoon Tabasco sauce

In medium bowl, blend soup mix, sour cream and then add the remaining ingredients; mixing well. Cover and refrigerate 2 hours. Serve with chips or vegetable crudités.


Mini Cheese Balls Recipe

1 (8 ounce) package cream cheese, softened
1 cup minced celery
salt and pepper
1/2 cup chopped parsley

Combine cream cheese and celery. Season to taste with salt and pepper. Roll mixture into 1 inch balls and roll in chopped parsley. Skewer with toothpicks and chill well, covered, up to two days in advance.
Makes about 24 appetizers.


Stuffed Mushrooms Recipe

1 lb. fresh mushrooms
4 T. butter
2 T. minced onion
2 c. bread crumbs
1 T. lemon juice
1 tsp. salt
1/4 tsp. pepper
2 T. minced parsley

Wash mushrooms. Remove stems, dice. Cook with butter and onion until soft. Remove from heat; add seasonings and crumbs and mix well. Lightly salt caps. Place a spoonful of stuffing in each cap and place in a baking dish. Bake 15 minutes at 350 degrees.


Chicken Egg Rolls

1 pkg. boneless skinless chicken breast, chopped
1 head cabbage, shredded
1 bunch green onion, sliced
1 can water chestnuts, diced
3 T. soy sauce
1-2 chicken bouillon cubes
1 pkg. egg roll wrappers

Brown chicken. Prepare soup bouillon for approximately 3 cups of water. Add green onions, cabbage and soy sauce. Simmer until almost all liquid is absorbed. Add water chestnuts.Fold egg roll wrappers according to package instructions. Place heaping tablespoon of mixture to corner of wrapper. Fold. Fry until golden brown. Dry on rack. Use horseradish and mustard to dip.


Cocktail Meatballs Recipe

1 lb. ground beef
1/2 c bread crumbs
1/3 c chopped onions
1/4 c milk
1 egg
1 T. parsley
1 T. salt
1 T. pepper
1/2 tsp. Worcestershire sauce
12 oz. bottle chili sauce
10 oz. grape jelly
1/4 c shortening for browning

Cook jelly and chili sauce together. Combine beef, bread crumbs, egg, onion, parsley, salt and pepper and worcestershire sauce in a bowel. Form 1 inch meatballs and brown in shortening. Put browned meatballs into jelly and chili sauce mixture. Simmer, uncovered for 30 min.


Crab Ball Recipe

11 oz. cream cheese
4 tsp. Worcestershire sauce
2 tsp. lemon juice
4 tsp. mayonnaise
1/4 tsp. garlic salt
2 tsp. minced onion
6-1/2 oz. can crab meat
Chili sauce

Mix cream cheese, worcestershire sauce, lemon juice, mayonnaise, garlic salt and onion well and form into a ball. Chill ball. Pour chili sauce over top and put crab on. Serve with crackers.


Egg Rolls Recipe

1/2 lb. ground pork
1/2 lb. ground beef
3 c. celery, chopped fine
1-1/2 c. carrots, chopped fine
2 bunches scallions, chopped fine
2 c. fresh beans sprouts
2 c. fresh mushrooms, chopped
1 T. soy sauce
2 tsp. sugar
egg roll wrappers

In large frying pan, brown pork and beef together; set aside. Stir fry celery and carrots for 5 minutes or until just tender/crisp. Add remaining vegetables, stir fry 2 minutes. Add soy sauce and sugar. Add vegetable mixture to browned meat. Roll up in egg roll wrappers. Seal with water. Deep fry until lightly browned, about 2 minutes, or use cooking spray to coat non-stick fry pan, turning to brown all sides.


Cucumber Appetizers Recipe

1 pkg. dry Hidden Valley Ranch Dressing
2 T. mayonnaise
1 loaf cocktail rye bread
1 (8-oz.) pkg. cream cheese
cucumber, peeled and sliced

Mix together package of ranch dressing, mayonnaise and cream cheese. Spread dressing mixture on a slice of bread. Place a slice of cucumber on top of dressing mixture.


Holiday Sausage Balls Recipe

1 lb. hot sausage
1 lb. mild sausage
3 c. Bisquick
1/2 c. milk
1 jar CheeseWhiz

Mix all ingredients together. Roll into balls and bake for 20 minutes at 400 degrees. Can be made ahead of time and frozen.


Sausages with Maple Glaze Recipe

2 pkgs (8 oz. ea.) brown-&-serve sausage links
1 cup maple syrup
1/2 cup packed brown sugar
1 tsp ground cinnamon

In a large skillet, cook sausage links until browned; drain. Combine syrup, brown sugar, and cinnamon; stir into skillet. Bring to a boil, cook and stir until sausages are glazed.
Yields 6-8 servings.


Pecan Pie Balls

3 slices leftover pecan pie
1 - 2 T. light Karo syrup
1/2 tsp. maple extract
powdered sugar for garnishing

Place pecan pie in the food processor and pulse the pie until it is well crushed. Add Karo syrup 1 drop at a time until the pie mixture forms a ball and pulls away from the side of the processor. Roll into desired sized balls, approximately 1 inch, and then roll in powdered sugar and serve. You can also roll these balls into finely chopped and toasted pecans.


Easy Bacon Wrapped Smokies Recipe

1 or 2 pkgs of Little Smokies
1/4 slice bacon for each sausage
brown sugar

Wrap each sausage with bacon and secure with toothpick. Place in shallow baking pan lined with foil, toothpicks pointing up. Add brown sugar, burying the sausages. Bake at 350 degrees for approximately 1 hour until the sugar is melted. Baste if necessary.


Salmon Log

3 ( 6 oz. ) cans skinned and boned pink salmon, well drained
1 T. lemon juice
1 tsp. prepared horseradish
1/4 tsp.. liquid smoke
1 ( 8 oz. ) pkg. cream cheese, softened
2 tsp. minced onion
1/2 tsp. salt
1/2 c. finely chopped pecans
3 T. chopped fresh parsley

Stir together first 7 ingredients; cover and chill 2 hours. Shape mixture into a 7 inch log.. Stir together pecans and parsley in a shallow dish. ROll log in pecans mixture, and wrap in plastic wrap; chill. Serve with assorted crackers.
Makes 3 cups.


Sweet and Sour Smokies Recipe

2 lb. little smokies
1 c. brown sugar
3 T. flour
2 tsp. dry mustard
1-1/2 tsp. soy sauce
1 c. pineapple juice
1 c. vinegar

Mix sugar, flour, & mustard. Add pineapple juice, soy sauce & vinegar. Cook to thicken. Add smokies and cook until heated.

Holiday Candy Recipes from Ana

Christmas Hard Candy Recipe

4 c. sugar
2 c. water
1 1/2 c. light corn syrup
1 1/2 tsp. food coloring
1 tsp. flavoring oil

Mix sugar, water and syrup in heavy saucepan, heat to 280 degrees. Add food coloring and flavoring oil. Pour onto a buttered cookie sheet. Cool and break into pieces.


Never Fail Divinity Recipe

2 1/2 c. sugar
1/2 c. light corn syrup
2 egg whites
1 tsp. vanilla
1/4 tsp. salt
1/2 c. water

In 2 quart saucepan, combine sugar, corn syrup, salt and water. Cook to hard ball stage on candy thermometer (260 degrees) stirring only until sugar dissolves. Meanwhile, beat egg whites to stiff peaks. Gradually pour syrup over egg whites, beating at high speed on electric mixer. Add vanilla and beat till candy holds its shape, 4 to 5 minutes. Quickly drop from teaspoon onto waxed paper.

Christmas Popcorn Ball Recipes from Lisa in TX

Christmas Popcorn Balls Recipe

6 T. butter
3 c. mini-marshmallows
1/2 3-oz. pkg. raspberry gelatin, approx. 3 T.
3 qt. unsalted popcorn, popped

In a saucepan, melt butter, add marshmallows and stir until melted. Mix in dry gelatin. Pour mixture over popcorn and mix well with buttered hands. Form into balls.

Cranberry Popcorn Balls

6 c. popped corn
3 c. miniature marshmallows
1 T. butter or margarine
1 c. dried cranberries, chopped
1 c. walnuts, chopped
2 T. orange peel
1/4 tsp. salt

Place popcorn in a large bowl; set aside. In a heavy saucepan over low heat, cook and stir marshmallows and butter until smooth. Stir in cranberries, walnuts, orange peel and salt; mix well. Pour over popcorn and toss to coat. Press into a greased 9 x 13-inch baking pan. Cool. Cut into bars with a serrated knife. Yield: 1 doz.

Ham Glaze Recipes from Sharon

Pineapple Glaze Ham Recipe

1 c. brown sugar
1 T. cornstarch
1/4 tsp. salt
1 small can crushed pineapple
2 T. lemon juice
1 T. prepared mustard

In saucepan, stir brown sugar, cornstarch, salt and pineapple; add lemon juice and prepared mustard. Cook over medium heat, boil and stir 1 minute. Use to top ham when baking.


Cherry Pie Filling Baked Ham Recipe

4 to 5 lb. ham
1 small can pineapple rings
1 can cherry pie filling
1 c. brown sugar

Poke knife in ham several times. Place in pan. Place pineapple on top with toothpicks holding in place. Place cherry pie filling on top of pineapple, sprinkle brown sugar on top of it. Wrap in aluminum foil tightly.

Do not poke hole in foil. Bake at 350 degrees 3-1/2 to 4 hours.
