Sussex County (Delaware) Mexican Pumpkin ( 1st Place 2002)

Jack-Be-Little Miniature Pumpkin Recipe

Precooked Old El Paso Ground Beef
Shredded Sharp Cheddar Cheese
Guacamole or Tortilla Chips
Optional Hot Hot!!Hot Sauce
Sour Cream
Saw off top of pumpkin. Clean out inside.
Sprinkle layer of cheese.
Place a layer of beef on top.
Repeat layers, leaving a little space at top of pumpkin.
Place top on pumpkin.
Cook in microwave 100% power for 5 min.
Scrape inside of pumpkin to eat. Serve with chips and optional ingredients.

Perfect Pumpkin Bisque Recipe

2 t. vegetable oil
1 large onion
2 ( 14 oz) cans fat-free organic chicken broth
1 ( 15 oz) can organic pumpkin
1/4 cup orange juice concentrate
1 T. bottled fresh ginger (crushed, minced in produce section)
1/8 t. cayenne pepper
1/4 t. salt
1/2 cup heavy cream or whipping cream
minced fresh chives, sour cream, or croutons for optional garnish

Heat oil over lw heat in 4 1/2 qt. Dutch oven. Peel & finely mince onion and add to pot.
Cook string often,until onion begins to soften, about 2 min. Add broth, pumpkin, juice, ginger, pepper & salt. Stir to mix. Bring soup to boil on high. Reduce to low & add cream.
Simmer, stirring frequently, until ready to serve up to 30 min. Cadel into bowls, garnish. Serve 8.

Ditto and LIttle One's Uncle Joe (my brother) sent me a new cookbook. It is the Complete American's Test Kitchen - 2001-2017 TV Show Cookbook. It is a wonderful cookbook and I have enjoyed looking at it. I opened it on my computer desk. Today I found that there may be a problem looking at the new cookbook. When I got home today Ditto had claimed the book as his. He had his fleece blanket on top of it and was sound asleep. I attempted move Ditto and his blanket off of the cookbook and Ditto gave me dirty looks. I left and did some more errands. When I came home Ditto had again put his blanket on the cookbook and was asleep on it.

I need to call Ditto's Uncle Joe to thank him for Ditto's new bed. Hopefully Ditto will decide he would rather sleep in his nice soft bed instead and I will again be able to read my new cookbook.

Just did a trade with Ditto and it worked. I picked up Ditto and his blanket and put in the empty recipe book box and I got the cookbook. He liked the trade.  Yea!!

Ditto's rule of the house is what is Ditto's is Ditto's. What is Little One's is Ditto's and what is mine is Ditto's.

Thai Glazed Pork Chops Recipe
4 Servings

1 tb vegetable oil
4 pork chops, 1/2" thick
1/2 c Knorr Thai sauce
1/4 c peach or apricot jam
1/2 red pepper, chopped
Chopped cliantro or parsley

In a skillet, heat oil over medium-high heat; add pork chops and brown on both sides. In a small bowl combine sauce and jam; pour over chops, turning to coat. Stir in red pepper. Reduce heat; simmer uncovered 10 minutes or until tender, turning chops occasionally. Serve with rice and garnish with chopped cilantro or parsley.

Meatball Stroganoff Recipe
Makes 2 Servings

1 lb ground beef
1/4 c dry bread crumbs, fine
1/4 c onions, chopped fine
1 egg, slightly beaten
1/4 ts Salt
Dash of pepper
1 cn cream of mushroom soup
1/2 c sour cream
1/4 c water
Noodles, cooked

Mix thoroughly beef, bread crumbs, onion, egg and seasonings. Shape into 16 meat balls. In a skillet, brown meat balls; pour off fat. Stir in soup, sour cream and water. Cover; cook over low heat for 20 minutes. Stir now and then. Serve with noodles.

Barbecued Pork Chops Recipe
Makes 8 Servings

1/2 c water
2 tb dry mustard
4 tb chili sauce
1/4 c vinegar
3 tb brown sugar
8 pork chops

Combine ingredients and mix well. Pour over seasoned chops in glass baking dish, cover and bake at 400 F degrees for 1-1/2 hours, uncovering last 30 minutes. Water may be added to make gravy. Delicious with ribs also.

Oven Barbecue Tenderloin Recipe
Makes 6 Servings

2-3/4 lb tenderloin
Veg. cooking oil
3 tb Ketchup
2 tb Vinegar
1 1/2 tb Maple syrup
2 ts Dijon mustard
1 ts Worchestershire sauce
1/8 ts Ground pepper

Trim fat from tenderloins. Place tenderloins on rack in roasting pan coated with cooking spray. Combine ketchup, vinegar, syrup, mustard, Worcestershire sauce and pepper and brush over tenderloin.

Heat oven to 400. Bake uncovered, basting with remaining mixture, 30 minutes or until meat thermometer registers reaches 160. Let stand 10 minutes. Cut into thin slices.

Crock Pot Pepper Steak Recipe
Makes 6 Servings

2 lb lean round steak
2 green peppers; chopped
2 tb minced dried onion
1 c beef boullion
1/4 c soy sauce
1/2 ts ground ginger
1/2 ts garlic powder

Cut steak into serving size portions. Place half the steak in Crockpot. Arrange green peppers on steak. Place remaining steak on top. Mix remaining ingredients and pour over meat. cover and cook on Low setting for 8 to 10 hours.

Pinto Bean Pie Recipe

1 c Cooked pintos with no, seasoning; mash
4 eggs
3 c sugar
1 c coconut
1/2 ts salt
1/2 lb butter or margarine
1 ts vanilla
1 c pecans, chop
3 unbaked pie crusts

Combine all ingredients and put in pie crusts. Bake in preheated 300 degrees for 45 to 60 minutes.
This pie is so good. You would never think it had beans in it.

Rocky Road Dessert Recipe

1 sm package instant chocolate pudding
1 c cold sweetened condensed milk
1 c cold milk
1 lg container non-dairy whipped topping,, divided
1 c marshmallow fluff
1/3 c chopped maraschino cherries
1/3 c chopped almonds;, divided
1 prepared chocolate crumb pie crust

Prepare pudding according to directions using condensed milk and milk. Add half of the container of whipped topping. Add marshmallow fluff. Whip until light and fluffy. Fold in chopped cherries. Sprinkle 1/2 cup chopped almonds on crust. Spoon chocolat mixture into crust and chill several hours or until firm. Before serving, spoon remaining whipped topping over chocalate mixture. Sprinkle reserved chopped almonds over topping.

Millionaire Pie Recipe

1 can sweetened condensed milk
1/3 c lemon juice
1 can (1-lb) pineapple chunks; drained
1 c Pecan pieces
1 carton (9-oz) cool whip
2 pie shells; baked

Combine all ingredients. Put into 2 baked pie shells. Freeze.

Peaches and Cream Turnovers Recipe

2 pie Crust for 9" pies
1 Egg
2 pk Cream Cheese; room temp., 3 oz ea.
1/2 c Powdered Sugar
20 oz Peach Pie Filling

Preheat sandwich maker. Prepare pie crust and roll 2 crust about 11" by 11" folding each for easy handling. In blender or food processor combine egg, cream cheese and powdered sugar until smooth. Open lid and carefully lay first square of pie dough over entire surface. With back of spoon, push dough down into pockets and spoon pie filling into pockets. Top with the cream mixture dividing between 8 pockets. Lay second square of dough over filling allowing excess to hang over sides. Lower the top and bake about 10 minutes or until dough is golden brown.
