Lisa's Pie Recipes (6 Recipes)

Banana Cream Pie Recipe

3/4 c. sugar
3 T. cornstarch
1/4 tsp. salt
2 c. milk
3 egg yolks, slightly beaten
2 T. butter
1 tsp. vanilla
3 bananas, sliced very thin
1 pie shell (9-inch), unbaked
3 egg whites
6 T.sugar

Combine first 3 ingredients. Gradually add milk and cook in microwave on high until boiling. Add egg yolks and continue cooking on high in microwave until very thick. Add butter and vanilla and let cool. Stir in bananas. Make meringue by beating egg whites (with a little cream of tartar) and adding sugar one T. at a time until stiff. Spread on pie filling. Bake in a hot oven (400 degrees) for about 5 to 10 minutes until golden brown. Cool thoroughly.

Old Fashion Chess Pie Recipe

1 c. butter, melted
2 c. granulated sugar
5 eggs
1 tsp. vanilla extract
1 (9-inch) pie shell, unbaked

Melt butter with sugar; cool. Add eggs and vanilla. Mix well. Pour into unbaked pie shell. Bake at 350 degrees or until golden brown and tested as being done.

Old Fashion Chocolate Pie Recipe

2-1/2 c. sugar
3 heaping T. flour
3 heaping T. cocoa
1 lg. can caranation milk
2 c. milk
6 eggs, seperated (save whites)
1 stick butter
1 tsp. vanilla

6 egg whites
1/2 tsp. vanilla
1/4 c.sugar
1/4 tsp. cream of tartar (optional)

In large boiler mix sugar, flour, cocoa, milk, carnation milk, egg yolks, vanilla and butter. Cook over medium-low heat stirring "Constantly". Do not allow to boil. Cook until thick like gravy. Pour into cooked pie shells and allow to cool. While pies are cooling prepare meringue. In medium bowl add egg whites, vanilla, sugar and cream of tartar. Beat vigorously until peaks. Spread over cool pies and bake at 350 until meringue turns golden brown.

Pecan Pumpkin Pie

3 eggs
1 c. solid pumpkin
1/3 c. sugar
1 tsp. pumpkin pie spice
2/3 c. light corn syrup
1/2 c. sugar
3 T. melted butter
1/2 tsp. vanilla
1 c. pecan halves
1 unbaked 9 inch pie shell

Stir together 1 lightly beaten egg, pumpkin, 1/3 c. sugar and pie spice. Put in bottom of pie shell. Combine 2 eggs, corn syrup, sugar, butter and vanilla. Stir in nuts and put over pumpkin layer. Bake at 350 degrees for 50 minutes or until set.

Sour Cream Peach Pie Recipe

4 fresh peaches
8 oz. sour cream
1/2 c. sugar
3 tsp. corn starch
1 tsp. almond extract
1- 8 in. pie shell

Mix sour cream, sugar, cornstarch and almond extract. In an 8 inch pie shell place peaches which are peeled,pitted and cut in halves pit side up. Pour sour cream mixture over peaches. Bake in a 350 degrees oven for 1 hour and 10 minutes or until done.

Sour Cream Blueberry Pie Recipe

3/4 c. sugar
3 T. all-purpose flour
1 c. sour cream
2 eggs, beaten
1 tsp. almond extract
2 c. fresh blueberries
1 (9") unbaked pie shell

1/4 c. all-purpose flour
1/4 c. brown sugar
2 T. butter or margarine, melted

In large bowl, mix together sugar and flour. Add sour cream, eggs and almond extract. Mix well. Stir in blueberries. Pour mixture into pie shell.

Combine flour, brown sugar, and butter. Mix well. Sprinkle evenly over filling. Bake in 375 degrees oven till set, 40 to 45 min. Serve warm or cool.

Oatmeal Scones Recipe

1-1/4 c. plus 1T. flour
1-1/2 tsp. cream of tartar
1 tsp. baking soda
1/2 tsp. salt
3/4 oz. uncooked quick oats
1/4 c. margarine
1/4 c. skim milk
2 tsp. molasses

Mix first 4 ingredients and oats. With pasty blender, cut margarine until coarse meal. Add milk and molasses. Knead dough. Roll to form 10" circle. Cut into 8 wedges. Bake 5 minutes. Using pancake turner, turn scones over and bake until golden brown. About 5 min. more.


Zucchini Oatmeal Muffins Recipe

2-1/2 c. flour
1-1/2 c. sugar
1 c. chopped nuts
1/2 c. quick oats, uncooked
1 T. baking powder
1 tsp. cinnamon
1 tsp. salt
4 eggs
3/4 c. oil
10 oz. shredded zucchini

Mix together flour, sugar, oats, nuts, baking powder, salt and cinnamon. Add oil and eggs and blend together with fork. Blend in zucchini until moistened. Batter will be lumpy. Measured into lined muffin pans. Bake at 400 degrees for 20 minutes.
Yield: 18 to 24 muffins

Nana's Tossed Salad Recipe

1/2 c. vegetable oil
1/3 c. sugar
2 T. vinegar
1 tsp. salt
1/4 tsp. pepper
1 lg. head lettuce, torn
2 bacon strips, cooked & crumbled
1/3 c. sliced almonds
1/4 c. sesame seeds
4 green onions, sliced
3/4 c. chow mein noodles

In a jar with a tight-fitting lid, combine oil, sugar, vinegar, salt and pepper; shake well. Chill for one hour. Just before serving, combine the lettuce, bacon, almonds. sesame seeds and onions ina lg. bowl; add dressing and toss. Top with chow mein noodles.


Southwestern Vegetable Salad Recipe

1 pkg. (16 oz.) frozen cut green beans, thawed and drained
1 pkg. (16 oz.) frozen peas, thawed and drained
1 pkg. (16 oz.) frozen corn, thawed and drained
1 medium green pepper, diced
1 medium sweet yellow pepper, diced
1 medium red pepper, diced
1 c. celery, chopped
1 c. onion, chopped
1 c. sugar
3/4 c. cider vinegar
1/2 c. vegetable oil
1 T. water
1 tsp. salt
1/2 tsp. pepper

In a Large bowl, combine green beans, peas, corn, green pepper, yellow pepper, red pepper, celery, and onion; set aside. In a saucepan, heat the sugar, vinegar, oil, water, salt, and pepper over medium heat until sugar is dissolved. Pour warm dressing over vegetables; toss to coat. Cover and refrigerate for 2 hours or overnight. Serve with slotted spoon.
Makes: 12 - 14 servings.


Nana's Spinach Salad Recipe

Spinach Salad

1/4 cup packed light brown sugar
1 Tbl red wine vinegar
2 tsp water
1/2 cup mayonnaise
4 slices bacon, cooked crisp and crumbled
6 cups torn fresh spinach
16 large mushrooms, sliced
2 hard cooked eggs, chopped
1/4 cup shredded Parmesan cheese

Combine sugar, vinegar, water, mayonnaise to make dressing. Stir in the bacon and chill for several hours. Pour over mixture of spinach, mushrooms, eggs, cheese and croutons just before serving.

Athena's Plantain and Banana Recipes

Marilyn, loved the plantain recipe! Here's another one....

Plantains with Brown Sugar Recipe

1 T. butter
2 T. lemon juice
2 -8 T. unsweetened pineapple juice
2 ripe plantains, peeled and quartered
1/4 cup packed brown sugar
1/2 t. ground cinnamon
Dash ground cloves
3 T. rum
2 cups vanilla frozen yogurt
Stick cinnamon (optional)

In large skillet, melt butter. Stir in lemon juice & 2 T. pineapple juice. Add plantains.
Sprinkle plantains w/brown sugar, cinnamon & cloves. Reduce heat; simmer
for 15 min., adding pineapple juice as needed. Add rum to skillet & cook 2 min. or until thickened. Serve w/ frozen vanilla yogurt. Garnish with stick cinnamon. Serves 4.

Easy Plantain Bake Recipe

4 plantains, with peels
4 cups butter
Pepper, to taste

With a fork, pierce the skin of the plantain. Place on baking sheet and bake at 400 for 1 hr. Remove, pull back peel, & season each w/ butter & dash of pepper. Serve in skins.. 4 servings.

Brennan's Bananas Foster Recipe

1 cup butter
1 cup brown sugar
1/2 t. cinnamon
1/4 cup banana liqueur
4 bananas, cut in half lengthwise, then halved
1/4 cup dark rum
4 scoops vanilla ice cream

Combine butter, sugar and cinnamon in skillet.
Place pan over low heat & cook stirring until sugar dissolves.
Stir in liqueur; place bananas in the pan. When begin to brown, carefully add run.
Continue to cook until rum is hot. Then tip pan slightly, to ignite the rum. When flames subside
lift bananas out of pan & place 4 pieces over each portion of ice cream. Generously spoon warm sauce over top & serve immediately.
4 servings.

Thanks BarbDe for your ideas. I have had an Air Fryer for a few years, but only use it very occasionally and mostly for chips/or different flavoured potato type things. Have never thought of alternatives as I only wanted it as I hated cleaning my "gungy" deep fat fryer. Great, I'll start some new trials. xx
