Oma's Salmon Patties Recipe

1-14 3/4 oz. can red sockeye salmon
1 egg
10-15 saltine crackers crushed
1 T. lemon juice
1/2 c. diced green pepper
1/2 onion, diced
1/2 tsp. dill weed
small amount of cooking oil for browning

Open can of salmon and remove all skin and cartilage but reserve the juice. Saute green pepper and onion in small amount of oil. In small bowl lightly beat egg. Add cleaned salmon, crackers, lemon, and dill weed. Mix in green pepper and onion. Mix with fork until salmon holds together with ingredients. If to dry add small amount of reserved juice.Make small patties and lightly fry on both sides in small amount of oil till brown, about 8 minutes on each side.
