Pumpkin Mac and Cheese Recipe

2 cups elbow macaroni
2 T. butter
2 T. flour
1/2 t. salt
1/2 t. pepper
1 cup whipping cream
1 cup whole milk
4 oz. Fontina cheese, shredded
1 15 oz. can organic pumpkin
1 T. snipped fresh sage or 1/2 t. dried leaf sage, crushed
1/2 cup soft bread crumbs
1/2 cup grated Parmesan cheese
1/2 cup shopped walnuts
1 T. olive oil
Sage leaves (option al)

Preheat 350. Cook pasta. Drain cooked pasta, return to pot. For cheese sauce, melt butter over medium heat.
Stir in flour, salt & pepper. Add cream & milk all at once. Cook & stir until slightly thickened & bubbly. Stir in cheese, pumpkin & sage until cheese is milted. Stir sauce into pasta. Transfer to ungreased 2 qt. rectangular baking dish. In small bowl combine bread crumbs, Parmesan, walnuts & oil; sprinkle over pasta. Bake, uncovered, for 30 min. or until bubbly & top golden. Let stand 10 min. before serving. Sprinkle w/sage leaves.
