Sharon's Apple and Apple Cider Recipes

Apple Spice Tea Recipe

1-1/2 c. water
1/2 c. apple cider
2 tsp. dark brown sugar
two 1-inch strips each orange and lemon peels
1 cinnamon stick
3 whole cloves
1 whole allspice
2 tea bags
Garnish: 2 lemon slices

In 1 qt. saucepan combine all ingredients except tea bags; cook over high heat and bring to a boil. Reduce heat to medium-low; add tea bags and let simmer until flavors blend, about 5 minutes. Pour tea through sieve and into teapot or directly into tea cups; discarding solids, and serve each portion with a lemon slice.


Apple Crisp Recipe

4 c. sliced apples
3/4 c. light brown sugar
1/2 c. flour
1/2 c. oats
3/4 tsp. cinnamon
3/4 tsp. nutmeg
1/3 c. margarine

Heat oven to 375 degrees
Grease a square cake pan. Place apple slices in pan. Mix flour, oats, cinnamon and margarine together in a bowl.


Apple Cider Pork Chops Recipe

1/3 c. german-style mustard
2 c. apple cider
2 c. apple juice
3 apples, pared, cored, sliced 1/2-inch thick
2 T. cornstarch
1/2 c. raisins
6 pork loin chops, cut 1 1/2-inch thick
1/2 c. green onions, sliced
2 tsp. vegetable oil
1.4 c. water

Heat oil in large skillet. Brown pork chops over medium-high heat. Season with salt and pepper. Combine apple cider and mustard; pour over pork chops. Cover and cook over medium-low heat 45 minutes. Add apples, raisins and green onions. Cover and cook 5-10 minutes longer. Place pork chops and apples on serving platter; keep warm. Gradually stir combined cornstarch and water into cider liquid. Cook and stir until thickens. Serve sauce over pork chops and apples.


Hot Apple Cider Recipe

4 cups apple cider
1/4 cup lemon juice
1/4 cup brown sugar
1/2 teaspoon cinnamon
1/2 teaspoon all spice
1/2 teaspoon cloves

Heat apple cider, add sugar. Put spices in a porous bag. Put in cider and simmer for 15 to 30 minutes. Remove bag. Serve hot.


Hot Cinnamon Cider

6 c. apple cider or juice
1 cinnamon stick
1/4 tsp. nutmeg
1/4 c. honey
3 T. lemon juice
1 tsp. lemon rind
1 can unsweetened pineapple juice

Heat cider and cinnamon stick in a large pan. Bring to a boil and simmer about 5 minutes. Add nutmeg, honey, lemon juice, lemon rind and pineapple juice. Simmer uncovered another 5 minutes longer. Drink hot. Serves about 20.
