Sharon's Carrot Bread Recipe

1 c. sugar
3/4 c. vegetable oil
2 eggs
1 c. shredded carrots
1 1/2 c. flour
1-1/2 tsp. baking powder
1/4 tsp. salt
1 tsp. cinnamon
1/2 c. chopped nuts

Mix sugar, oil and eggs. Stir in carrots. Mix in flour, baking powder, salt, cinnamon and nuts. Pour into 1 large or 3 small greased loaf pans. Sprinkle tops with sugar. Bake at 350 degrees for 40 -45 minutes. Can add nuts or cherries to form flowers for a nice Christmas bread.
