Sharon's Carrot Cake Recipe

1 1/2 c. vegetable oil
2 c. sugar
4 eggs, beaten well
2 c. flour
2 tsp. baking powder
1-1/2 tsp. soda
1/2 tsp. salt
2 tsp. cinnamon
2-1/2 tsp. vanilla
3 c. grated carrots

In large mixing bowl, combine vegetable oil, sugar, eggs, flour, baking powder, soda, salt and cinnamon. Mix well on medium speed. Add vanilla and grated carrots. Blend well. Grease and flour pans. Bake at 325 degrees for 35 - 40 minutes.
