Sharon's Carrot Raisin Muffins Recipe

1 c. all-purpose flour
3/4 c. whole wheat flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1 lg. egg
1/2 c. granulated sugar
1/4 c. canola oil
1/4 tsp. vanilla extract
1/4 tsp. lemon extract
1 c. applesauce
1 c. carrots, shredded in food processor
1 c. baking raisins
1/2 c. warm water

Preheat oven to 400 degrees. Grease a muffin tin with non-stick spray. In a large bowl combine the all-purpose flour, whole wheat flour, baking soda, cinnamon and nutmeg. In a separate bowl whisk the egg and sugar together until a fluffy consistency. Beat in the oil, vanilla and lemon extracts. Stir in the applesauce. Stir the flour mixture into the batter until it is completely combined. Fold in the carrots, raisins and water. Spoon the batter into the prepared muffin tin. Bake in preheated oven for about 15 to 20 minutes or until lightly browned, and toothpick test comes out clean.
