Southwestern Pumpkin Burgers Recipe

3 T. vegetable oil, divided
1/2 cup finely chopped onion
1/2 cup frozen corn kernels, thawed
1/3 cup finely chopped green bell pepper
1 clove garlic, minced
1 t. cumin
1 t. chili powder
1/2 t. smoked paprika
3/4 cup fine-curd cottage cheese
1/2 cup canned organic pumpkin
1 egg yolk
2 T chopped fresh Italian parsley

Heat 2 T oil in skillet over med. heat; add onion, corn, pepper, cook 5 min., or until soft. Add garlic, cumin, chili powder, smoked paprika & cook for 30 sec. more, stirring constantly. Remove from heat. In large bowl, combine cheese, pumpkin egg yolk & mix with wooden spoon. Add onion-corn-pepper mixture, parsley, salt, pepper to taste. Stir & add bread crumbs & cheese. Stir until combined. Cover and refrigerate at least 2 hrs. or overnight. Heat 1 T. oil in skillet over med. heat. Shape pumpkin mixture into six 3/4 in thick patties. Place in skillet & cook. 3 min. on each side or until lightly browned, turning once. Serve with or without buns, passing ranch dressing at table , if desired. Can add tomato, onion, lettuce. Serves 6.
