Zucchini and Tomatoes Recipe

6 zucchini squash, sliced
1/2 cup sliced onion
4 Tbsp olive oil
2 Tbsp chopped parsley
salt and pepper to taste
1/2 tsp garlic powder
3 fresh tomatoes sliced thin
1/2-1 cup Parmesan or Romano cheese

Cook zucchini in boiling water till tender (5-6 minutes). Drain well. Saute onion in oil, add parsley then remove from heat. Place zucchini in layers of squash, tomatoes and onions ( do not drain oil from onions) in oblong buttered casserole dish. Sprinkle with salt and pepper each time you start a new set of layers. Top each set of layers with cheese (make the topping cheese). Bake 30 minutes at 375*
Makes 6 Servings
