Cranberry Orange Cake Recipe



















Cranberry Orange Cake Recipe

Ingredients
1 box , regular size, yellow cake mix
1 box( 4 serving size) instant vanilla pudding mix
1 cup water
1 stick oleo or butter, softened
2 tsp. Grated orange peel or orange zest
4 eggs
1 1/2 cups fresh or frozen cranberries, chopped. Do not thaw frozen cranberries.
Heat oven to 325 degrees. Grease and flour or spray with Pam for baking 12 cup tube or bundt pan . Mix all ingredient EXCEPT cranberries on medium speed about 2-3 minutes. Fold in cranberries. Spread into prepared pan. Bake about 57 - 65 minutes or till tests done with toothpick in middle. Cool about 1 hour before removing from pan.

Glaze
Make a glaze of 3 tablespoons softened oleo , 1 cup powdered sugar and 2-3 tablespoons hot water, 1/2 tsp.vanilla and 1/4 tsp.orange flavoring.Mix all ingredients and add drops of water till right consistency to pour onto cake.
This cake can be made in a 9 x 13 pan, or two 8 inch square pans. For small families, bake a square pan to eat and one to freeze for later.
It freezes well too.

This is a great seasonal cake to have at Thanksgiving or Christmas occasions..
