Cranberry Orange Cake Recipe
1 box , regular size,
yellow cake mix
1 box( 4 serving
size) instant vanilla pudding mix
1 stick oleo or butter,
2 tsp. Grated orange peel or
1 1/2 cups
fresh or frozen cranberries, chopped. Do
not thaw frozen cranberries.
oven to 325 degrees. Grease and flour or
spray with Pam for baking 12 cup tube or
bundt pan . Mix all ingredient EXCEPT
cranberries on medium speed about 2-3
minutes. Fold in cranberries. Spread
into prepared pan. Bake about 57 - 65
minutes or till tests done with
toothpick in middle. Cool about 1 hour
before removing from pan.
Make a glaze of 3 tablespoons softened
oleo , 1 cup powdered sugar and 2-3
tablespoons hot water, 1/2 tsp.vanilla
and 1/4 tsp.orange flavoring.Mix all
ingredients and add drops of water till
right consistency to pour onto cake.
This cake can be made in a 9 x 13 pan,
or two 8 inch square pans. For small
families, bake a square pan to eat and
one to freeze for later.
This is a great
seasonal cake to have at Thanksgiving or
Marvis in Texas
