White Sauce Recipe



















In the 12/14/17 newsletter Laurie wanted to know how to fix white sauce. It was one of the first things I learned many years ago in Home Ec and I use the recipe as a base still today.

White Sauce - Med. thick

4 tbl. butter
4 tbl. flour
salt to taste
1 3/4 to 2 c. milk

Melt butter in saucepan. Add flour and salt and blend till smooth. Add milk slowly, stirring rapidly to prevent lumping. Bring to a boil, stirring constantly. Reduce heat and cook 1 minute, stirring constantly. I use a wisk to keep lumps from forming. This is the base for my Creamed Chipped Beef on Toast. Chris in NM


Creamed Chipped Beef on Toast

1 1 c. med. white sauce
pkg. dried chipped beef, chopped into small pieces
toast

sauce:

4 tbl. butter
4 tbl. flour
salt to taste
1 c. to 2 C milk

Melt butter in saucepan. Add flour and salt and blend till smooth. Add milk slowly, stirring rapidly to prevent lumping. Bring to a boil, stirring constantly. Reduce heat and cook 1 minute, stirring constantly. Add chopped beef and stir. Cook 1 minute more. Then serve on toast. Chris in NM
