Here are some camping recipes for Julia. You can make the foil chicken packets up at home and store in a cooler that will keep the meat at a safe temperature. I do this and cook them the first night. The coffee can ice cream recipe has been around for many, many years. I have never tried using the plastic cans, as I know this recipe was developed long before they even existed. I know many Girl Scout leaders have used this recipe for years. also, hot dogs, hamburgers, and brots are always a big hit any time and may be more popular with kids than chicken or fish packets. You can also mix up your favorite meat loaf recipe, make it in to patties, put on top of thinly sliced potatoes and cook in foil packets.

Foil Pack Apple Crisp Recipe

Mix together and set aside:
1/2 cup oatmeal
6 tbsp. flour
1/4 cup EACH brown and white sugar
1/2 tsp. cinnamon

Cut four squares of foil. Spray foil with non stick spray and Put a pat of butter in center. Place apple slices from three or four apples (peeled and cored and thinly sliced) Sprinkle with the crumb mixture, dividing as equally as you can Top with another pat of butter.

Optionally can add a few raisins, nuts, or butterscotch chips. Fold the foil into a neat package with crimped edges.
Bake on grill for approximately twenty minutes or until apples are tender. Open packet carefully, cool slightly. Can be served with ice cream.

Grilled Chicken in Foil Packet Recipe

1 boneless chicken breast per serving
red bell pepper
yellow bell pepper
sliced mushrooms
sliced squash or zucchini
salt and pepper to taste
teriyaki or soy sauce (lite)

Place one boneless chicken breast on a square piece of aluminum foil that has been sprayed with no stick spray. On top, place slices of onion, red bell pepper, yellow bell pepper, sliced mushrooms and sliced squash or zucchini. Pile it on because it will shrink as it cooks. Salt and pepper to taste. Sprinkle with teriyaki or soy sauce and tightly seal the aluminum foil. Place on preheated grill. Cook on low heat for 20 to 25 minutes. Carefully open foil packets as steam will escape and obviously the foil is very hot. Can also do this with fish, pork chops or hamburger patties. May need to adjust the cooking time. Can also use other vegetables depending on preference.

Foil Grilled Banana Boats Recipe

Chocolate chips
Miniature marshmallows

After the coals from a campfire are glowing red, take a piece of foil and put together the following ingredients - to be enclosed in the foil and cooked on the coals: 1 banana in the peel - split lengthwise. Cut the banana (inside) in chunks - leaving it in the peeling. Sprinkle with chocolate chips and miniature marshmallows - wrap up securely in foil and roast. Can use other flavored chips and nuts.

Coffee Can Ice Cream Recipe

2 c. milk, scalded
4 egg yolks, slightly beaten
1 c. whipping cream
1/2 c. sugar
1 tsp. vanilla
1/8 tsp. salt

You Will Need
Rock salt
1 lb. coffee can
3 lb. coffee can
At least 2 people

Make a layer of rock salt and crushed ice along the bottom of the larger coffee can and place the small coffee can inside. Pack the sides with ice and salt. Use 3 parts ice and 1 part rock salt.

Making the ice cream:

Combine the sugar and salt and add the slightly beaten egg yolks. Beat until the sugar is dissolved; slowly add the scalded milk while stirring constantly. Cook in a double boiler or microwave, stirring constantly, until the mixture coats the back of a spoon. This makes a double batch. May be refrigerated or stored temporarily in freezer until ready to churn.
Pour the mixture into the 1 pound coffee can and snap on the lid.

Place the covered can into the 3 pound coffee can. Sit on the floor and roll coffee cans back and forth between people until the ice cream is frozen.
