Dynasty Corn Pudding Recipe

Dynasty Corn Pudding Recipe | Linda Evans

4 oz. unsalted butter, melted, plus additional for greasing
3 cups fresh corn kernels (4-5 ears)
2 eggs
1 cup sour cream
9 oz. Monterey Jack cheese, cut into 1/2 in. cubes
1/2 cup cornmeal
1 ( 4 oz.) can whole chiles, drained, patted dry, cut into 1/2 in. pieces
1/2 t. salt
1/2 cup grated Parmesan cheese

Preheat 350. Butter 2 qt. rectangular casserole. In blender, puree 1 cup corn kernels w/melted butter & eggs. In large bowl, combine all remaining ingredients except Parmesan. Add pureed corn & mix. Pour into casserole, sprinkle w/ Parmesan, bake 30 min until puffed & golden. Can be placed under broiler a couple minute to brown.
