Low Carb Key Lime Cheesecake Recipe

1-1/4 cup almond flour
3 tablespoons butter, melted
1-1/2 teaspoons sugar substitute

8 ounces cream cheese, softened
1/2 teaspoon vanilla extract, optional
1-1/2 cups heavy whipping cream
3 ounce packet sugar free lime Jell-O
1 teaspoon key lime or lemon zest

Preheat oven to 350 degrees. Generously spray an 8 inch springform pan with cooking spray.

Mix almond flour, butter and sugar until mixture is crumbly.

Press into the bottom of pan and bake for about 8 to 10 minutes until golden brown. Cool completely.

Using an electric mixer with the whisk attachment mix cream cheese until smooth and creamy.

Stir in vanilla extract. Add heavy cream and whisk on high until mixture thickens and soft

peaks forms. Reduce speed to low and mix in Jell-O packet and zest and mix until

blended. Spread mixture evenly with a spatula over cooled crust. Cover and chill in refrigerator until set, about 2 to 3 hours or overnight.

I just made the best cream of broccoli soup. Wonder why I didn't make it before.  It is so easy and so good!

Cream of Broccoli Soup Recipe

1 Green Giant Just for One Broccoli & Cheese Sauce
1 can Campbell's Cream of Chicken Soup
1 soup can of water
Pepper, no need for salt... soup has salt already in it.

Blend ingredients until broccoli is pretty fine but still visible. Heat in microwave until soup temperature you like. I did not add ... but you could add butter, sour cream or toppings.

I need some easy recipes to make in a mug cup. Would like one that are quick and easy to make. Would be nice to be able to put ingredients together in a mix and then use it with water to make a snack in the afteroon. Does anyone have some recipes they would share?

I noticed that Sue had 2 mug cake recipes in today's newsletter. That might be a start for you.

Caramel Shakes Recipe
Yield: 2 Servings

2 cup chocolate ice cream, softened
3 tb chocolate-flavored milk
2 cooled unfrosted brownies, in chunks
Additional unfrosted brownies, in pieces
Caramels with sea salt, in pieces
Caramel topping

In blender, place ice cream and milk. Cover and blend on high speed until
smooth and creamy. Add brownie chunks; cover and blend until smooth,
stopping blender to scrape down sides if necessary.
Pour into 2 glasses. Top with brownie and caramel pieces; drizzle with
caramel. Serve immediately.

Smoky Sweet Potato Mash Recipe

1-1/2 pounds sweet potatoes (3 medium)
1/4 cup butter, melted
1/4 cup firmly packed light brown sugar
1/2 teaspoon smoked paprika
1/4 teaspoon salt
4 cooked and crumbled bacon slices

Pierce sweet potatoes several times with a fork; arrange in a circle on paper towels in microwave oven. Microwave on high for 8 minutes, or until done; let stand for 10 to 12 minutes, or until cool to touch. Peel potatoes and mash with a potato masher until smooth. Do not use an electric mixer or food processor. Stir in butter, brown sugar, paprika and salt. Sprinkle evenly with crumbled bacon. Serve immediately.
Makes 4 servings.

Hi Nancy and Nancylanders! I have a question about Mary Ann's recipe for Nana's Banana Split cake recipe (June 2). Do you drain the pineapple? It sounds delicious.

Double Chocolate Banana Muffins
Makes 1 dozen

1-1/2 cups each flour and mashed bananas
1 cup each sugar and chocolate chips
1/3 cup each baking cocoa and canola oil
1 tsp baking soda
1/4 tsp each salt and baking powder
1 egg

Heat oven to 350°. Whisk together flour, sugar, cocoa, baking soda, salt, and baking powder. In a separate bowl, whisk bananas, oil, and egg. Add to flour mixture, stir. Fold in chips. Fill paper lined muffin cups 3/4 full. Bake until done 25 min. Cool 5 min. SERVE WARM & ENJOY...STREUSEL TOPPING---Combine 1/2 cup sugar, 1/3 cup flour, and 1/2 tsp cinnamon, cut in 1/4 cup butter until crumbly. Before baking, sprinkle over muffin cups.

I came up with this salad dressing many years ago, as I played with a recipe some one gave me. Please do not say, oh mustard no thanks as everyone who has tried it, including mustard and oil and vinegar haters want the recipe. It is great with greens and salmon or any kind of fish salad. I'm diabetic and it does not raise my sugar count. It really goes with all salads that have greens. ENJOY !!

Judy's Dressing Recipe

1/4 cup olive oil
3 Tbsp apple cider vinegar
2Tbsp honey (if you want it sweeter make it 3 Tbsp)
21/2 tbsp mayo
2 1/2 Tbsp whole grain dijon mustard (only whole grain)
Dash of black pepper (optional)

Put all in a jar with a lid, shake hard or put into bowl and whisk.

Lemon Custard Cake Dessert

1 lemon cake, baked (2 layer)
1 can sweetened condensed milk
1/2 c. fresh squeezed lemon juice
1 pt. whipping cream
1/2 c. sugar
lemon rind

Bake cake according to package directions. Remove from pan and cut in half. Crumble half of cake in 9x13 pan and press down. Mix the sweetened condensed milk slowly adding the lemon juice. Whip whipping cream with the sugar and add to the condensed milk mixture. Stir in 2 T. lemon rind. Pour 1/2 custard mixture over the cake. Crumble remaining half of cake over the top and pour remaining custard on top of the cake. Sprinkle coconut and lemon rind over the custard.

Blackened Chicken Recipe

4 Chicken Breast, Boneless
2 Tablespoons McCormick Creole Seasoning
1/2 Teaspoon Salt
1/2 Teaspoon Pepper
1 Teaspoon Cayenne Pepper
1/4 Teaspoon Oregano
1/4 Teaspoon Thyme
4 Tablespoons Butter or Margarine

Melt butter in microwave and then add all dry ingredients. Dip chicken into mixture and place in a broiling pan. Pour remaining mixture over chicken and broil about 7 minutes per side or until blackened and thoroughly done.


Chicken with Broccoli and Cauliflower Casserole Recipe

Broccoli & Cauliflower Chicken Casserole Recipe

4 chicken breasts, cooked & cubed
8 oz. sour cream
1 can cream of chicken soup
2 c. broccoli
2 c. cauliflower
1-2 slevees of Ritz crackers, crushed up
1/4 c. butter
salt & pepper to taste

Melt butter. Add to cracker crumbs. Mix well and set aside. Steam or blanch broccoli and cauliflower. Set aside. Mix soup and sour cream in large bowl. Add chicken and vegetables to mixture. Add salt and pepper to taste. Place in baking dish. Top with crackers. Bake for 30 minutes at 350 degrees.

Chicken Ala King Recipe

6 slices dried beef
6 chicken breasts, boned
3 slices bacon
1 C. sour cream
1 can cream of mushroom soup

Preheat oven to 350 degrees. Spray a 9 x 13 casserole dish with cooking spray. Place dried beef in casserole dish. Place chicken breasts on top of dried beef. Place 1/2 strip bacon on top of chicken. Mix sour cream and soup. Pour over chicken, sprinkle with paprika. Bake 40 min.

Turkey Tetrazzini Recipe

1 pkg. (7 oz.) spaghetti
2 c. chicken or turkey broth
2 c. half-and-half or milk
1/2 c. flour or Wondra
1/4 c. margarine or butter
1/2 t. salt
1/4 t. pepper
2 c. turkey or chicken, cooked and cut into chunks
1 c. black olives, sliced
1/2 c. almonds, slivered
1 c. cheddar cheese, shredded

Heat oven to 350 degrees. Cook and drain spaghetti as directed on package. Mix broth, half-and-half, flour, margarine, salt and pepper in 3-quart saucepan. Heat to boiling over medium heat, stirring constantly. Boil and stir 1 minute. Stir in spaghetti, turkey, olives and almonds. Spread in ungreased 2-quart casserole. Sprinkle with cheese. Bake uncovered 25-30 minutes or until hot and bubbly. Serves 6.

Crunchy Oven Chicken Recipe

4 cloves garlic, crushed
1 T. lime juice
2 T. reduced sodium soy sauce
1/2 tsp. ground black pepper
4 skinless, bone-in chicken breasts or thighs
8 oz. fat free plain yogurt
1/2 c. unbleached or all purpose flour
1/2 tsp. garlic powder
2 T. fat free milk
1-1/2 c. dried bread crumbs

Preheat oven to 375 degrees. Mix the garlic, lime juice, 1 tablespoon of the soy sauce, and 1/4 teaspoon of the pepper. Rub the sauce into the chicken, and refrigerate for 30 minutes. In a shallow bowl, combine the yogurt, flour, garlic powder, milk, and the remaining 1/4 teaspoon of pepper. Spread the bread crumbs on waxed paper. Dredge the chicken in the yogurt mixture, then press it into the bread crumbs on all sides. Place on the rack of a roasting pan, and coat the chicken generously with cooking spray. Bake for 45 minutes or until a thermometer inserted in the thickest portion registers 170 degrees and the juices run clear.
Makes 4 servings.

Zesty Chicken Casserole Recipe

2 lb. chicken, cut up
1 lb. potatoes, cut in chunks
1/2 c. Kraft Zesty Italian dressing
1/2 c. parmesan cheese
1 T. parsley or Italian seasoning

Layer chicken, then potatoes in 8 x 11-inch pan. Top with dressing, then cheese and seasonings. Bake at 400 degrees for 1 hour.

Chocolate Chip Pudding Chip Cookies

2 1/4 c. flour
1 small package chocolate instant pudding
1tsp. baking soda
1 tsp. vanilla
1 c. butter 2 eggs
1/4 c. sugar
1 (12 oz.) bag real chocolate chips

In bowl mix butter, sugars, pudding (dry) and vanilla. Beat until smooth and creamy. Add eggs and beat. Gradually add flour and soda. Stir in chocolate chips. (Batter will be stiff). Drop on ungreased cookie sheet. Bake at 375 degrees for 8 to 10 minutes.


Pineapple Cookies with Glaze Recipe

2 c. flour
1-1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
3/4 c. crushed pineapple, drained
1/2 c. shortening
1 c. brown sugar
1 egg
1 tsp. vanilla
powdered sugar

Drain pineapple thoroughly. Save the juice. Mix shortening until soft. Add brown sugar and mix well. Beat in egg. Add pineapple and vanilla. Last of all add the dry ingredients. Drop by teaspoon on greased cookie sheet. Bake 18 to 20 minutes in a 325 degrees oven. Cool. Glaze with 2 T. of the pineapple juice that is thickened with powdered sugar.


Peanut Butter Kiss Cookies Recipe

1-3/4 Cups All-Purpose Flour
1/2 Teaspoon Baking Soda
1/4 Teaspoon Salt
1/2 Cup Sugar
1/2 Cup Butter or Margarine
3/4 Cup Creamy Peanut Butter
1/4 Cup Light Corn Syrup
1 Tablespoon Milk
Hershey's Kisses

Preheat oven to 350 degrees.. You will need a mini muffin pan. Combine flour, soda, salt, and sugar; cut in butter and peanut butter. Stir in corn syrup and milk until blended. Pinch off about 1/2 teaspoon and roll into a small ball then roll in sugar until coated. Place in a spray coated muffin pan until pan is full. Unwrap kisses and press one kiss into each peanut butter cup. Bake in a 350� oven for 8 to 10 minutes.


Lite Peanut Butter Cake Cookies

1 pkg. sugar free Pillsbury yellow cake mix
1 cup lite creamy peanut butter
1/2 c. vegetable or canola oil
2 large eggs

Combine all ingredients in a large mixing bowl and stir until a smooth dough forms. Drop tablespoon-sized balls of dough onto a cookie sheet, leaving at least 2 inches between cookies on all sides(they will spread!) Bake at 350 degrees for 9-10 minutes. Allow the cookies to cool on baking sheet for 3-5 minutes before removing to a wire rack to cool completely.


% Minute Chocolate Mug Cake Recipe

4 T. flour
4 T. sugar
2 T. cocoa
1 egg
3 T. milk
3 T. oil
3 T. chocolate chips
small splash of vanilla extract
1 large coffee mug

Add dry ingredients to coffee mug, and mix well. Add the egg and mix thoroughly. Pour in the milk and oil and mix well. Add the chocolate chips and vanilla extract and mix well again. Put the mug in the microwave and cook for 3 minutes at 1000 watts (high). The cake will raise over the top of the mug, but don't get too alarmed. Allow to cool a little, and tip out onto a plate if desired.


Easy Mug Cake Recipe

1 box Angel Food cake mix
1 box any other flavor cake mix (2 layer)
2 T. water

In a Ziploc bag, combine the two cake mixes together, mixing very well. For each individual cake serving, take out 3 T. cake mixture and combine well with 2 T. water in a small, microwave-safe container (I use a coffee mug). Microwave on high for 1 min., and you have your own instant individual cake! Keep remaining cake mixture stored in Ziploc bag and use whenever you feel like a treat. You can top each cake with a dollop of whipped topping and/or some fresh fruit. *Helpful
Mix 3T. mix, 2 T. water, and cook 1 min. in microwave on high.

Note: This is great to fix for a snack at work. So easy and tastes great.


Strawberry And Spinach Salad Recipe

2 bunches spinach, washed and dried
1 pint fresh strawberries, halved
1/2 cup sugar
1/4 tsp Worcestershire sauce
1/3 cup oil
1 Tbl poppy seeds
1-1/2 tsp minced onion
1/4 cup cider vinegar
1/4 tsp paprika
sesame seeds

Blend sugar, Worcestershire, oil, poppy seeds, onion, vinegar and paprika, adding the oil and vinegar in a steady stream until mixed and thick. Drizzle on spinach and berries; sprinkle with sesame seeds.


Spinach Stuffed Tomatoes Recipe

8 medium or large tomatoes
2 cups chopped spinach
1 cup bread crumbs
1 cup Parmesan cheese
3 green onions, chopped
2 eggs
3 Tbs butter, melted
1/2 tsp thyme
1/4 tsp garlic powder
fresh black pepper

Cut tops from tomatoes (large tomatoes can be halved.) Remove pulp and seeds, leaving shell intact. Save pulp for later use. Sprinkle insides of shells with salt and turn upside down to drain. Cook spinach and drain well. Combine spinach with the remaining ingredients. Add salt and pepper to taste. Spoon mixture into tomato shells and place on a cookie sheet. Bake at 350 degrees for 30 minutes.
8 servings.


Sweet Sour Bacon Dressing for Spinach Recipe

1/2 lb. bacon cut into 1 inch pieces
1/2 c. chopped onions
1/4 c. brown sugar, packed
1 T. cornstarch
1 c. hot water
1/8 c. vinegar

When brown, remove cooked bacon pieces from skillet to absorbent paper. To drippings add onion and cook until tender. Remove some of the grease if you like. Add brown sugar and cornstarch and stir; add hot water vinegar and bacon pieces. Makes 1 1/3 cups.


Spinach Tortellini Salad Recipe

1 (9-oz). pkg. refrigerated uncooked cheese tortellini
2 c. shredded red cabbage
6 c. torn fresh spinach leaves
1 c. cherry tomatoes, halved
1/2 c. sliced green onion
6 slices bacon, cooked crisp and crumbled
Salad dressing such as a spicy vinaigrette
Parmesan cheese as desired

Cook tortellini to desired doneness as directed on package. Drain, rinse with cold water. Mix in cabbage,spinach, tomatoes, onion and bacon. Toss with desired dressing, top with parmesan cheese.
Serves 8.


Spinach Or Broccoli Casserole Recipe

1 pkg. frozen chopped spinach, thawed
3/4 c. grated sharp cheese
1 can celery soup
1 egg, beaten
1 T. grated onion
1 c. Pepperidge Farm herb stuffing mix (dry)
1/4 c. butter or margarine
salt and pepper

Cook lightly and drain spinach or broccoli. Mix together spinach or broccoli, cheese, soup, egg, butter and onion and stuffing mix (save some cheese and stuffing mix for topping). Pour into a greased medium-size casserole. Sprinkle the saved cheese and crumbs over the top. Bake 30 to 35 minutes at 350 degrees


Spinach Pie Recipe

2 (10 ounce) pkg frozen spinach
1 c. seasoned bread crumbs
1 container egg beaters
garlic to taste
salt to taste
pepper to taste
Pam spray

Cook spinach and drain; squeeze out as much water as possible. In a bowl mix spinach, bread crumbs, egg beaters and spices together. In a skillet coated with Pam, cook spinach mixture until the bottom browns. Flip over and cook until browned. Remove from skillet and slice into wedges.
Serves 4 or 5.
