Merry's Mexicali Pasta Salad Recipe

1/2 lb. ground beef
1/2 medium onion, chopped
1 pkg. taco seasoning mix
3/4 c. water
1/2 lb. rotini pasta
2 Roma tomatoes, chopped
8 oz. shredded Cheddar or Colby cheese
1 c. sliced black olives
1 avocado, peeled & cubed
1 c. taco sauce
1/4 c. mayonnaise
(2-3 c. shredded lettuce, optional)

In large skillet saute ground beef and onion; drain off excess fat. Add seasoning mix and water. Bring to boil, reduce heat and simmer uncovered 10 minutes, stirring occasionally.

Cook rotini according to package instructions. Drain and rinse undercold water.

Add all ingredients, to a large bowl & stir gently. Cover and refrigerate.

If desired, add shredded lettuce just prior to serving.
Serves 8.
