A favorite recipe from the past

Sandy's Big Soft Ginger Cookies Recipe

1-1/2 C. butter or margarine
2 C. sugar
2 eggs
1/2 C. molasses
5 1/4 C. flour (or less- we live at 4,600 feet elevation)
4 tsp. ground ginger
2 tsp. baking soda
1 1/2 tsp. cinnamon
1 tsp. cloves
1 tsp. salt

Beat butter or margarine and sugar until fluffy. Add eggs and molasses, beating well. Stir in combined dry ingredients, mixing well. Shape into 1 1/2" balls and roll in sugar. Place on ungreased baking sheets and bake at 350 for 11 to 12 minutes (until light brown and still puffy.)

DO NOT overbake. Let stand 2 minutes before transferring to wire racks to cool.
