She-Crab Soup Recipe
1 qt. milk
1/4 pint cream
Few drops lemon juice
1/8 t. mace
1/8 t. pepper
1 t. flour
white crab meat & crab eggs
4 T. dry sherry
butter in top of double boiler & blend
w/flour until smooth. Add milk
gradually, stirring constantly.
this add crab meat & eggs & all
seasonings except sherry.
over hot water for 20 min.
serve, place 1 T. warmed sherry in
individual soup bowls, then add soup &
top w/whipped cream. Sprinkle w/paprika
or finely chopped parsley. Secret: if
unable to obtain "she-crabs_, crumble
yolk of hard boiled eggs in bottom of
soup plates. Serves 4-6.
