Layered Southwestern Salad With Dressing Recipe

We eat a lot of salads and vegetables. You can substitute romaine, spinach or other lettuces in this recipe. I think it is best eaten the day you make it, but the leftovers always get eaten the next day.

Layered Southwestern Salad With Dressing Recipe

2 tomatoes
1 sm. onion, chopped
1 jalapeno pepper, seeded and chopped or to taste
1 avocado, peeled and seeded - optional
1 c. black beans, rinsed, drained, divided
2 c. Ice berg lettuce, washed and shredded
1/2 green, red or yellow pepper, chopped
1/2 c. fresh or frozen corn

4 tbsp. fresh lemon juice
6 tbsp. olive oil
3 to 4 garlic cloves, crushed
Salt and pepper to taste
1/2 cup shredded Mexican cheese - optional

In food processor put one tomato, onion, jalapeno, salt and pepper, and avocado, if using until pureed. Mix together with 1/2 of the black beans.
In serving bowl place one layer of lettuce, green pepper, 1/2 black bean mix and corn. Slice the second tomato and arrange the slices on top and spoon the remaining black beans onto the tomatoes. sprinkle top with cheese.
Whisk together the lemon juice, olive oil, garlic, salt and pepper, pour 1/2 of the dressing over the salad serve the rest on the side.
