We eat a lot
of salads and vegetables. You can
substitute romaine, spinach or other
lettuces in this recipe. I think it is
best eaten the day you make it, but the
leftovers always get eaten the next day.
Salad With Dressing Recipe
1 jalapeno pepper,
seeded and chopped or to taste
avocado, peeled and seeded - optional
1 c. black beans, rinsed, drained,
2 c. Ice berg lettuce, washed
1/2 green, red or yellow
1/2 c. fresh or
4 tbsp. fresh lemon juice
6 tbsp. olive oil
3 to 4 garlic
Salt and pepper to
1/2 cup shredded Mexican cheese
processor put one tomato, onion,
jalapeno, salt and pepper, and avocado,
if using until pureed. Mix together with
1/2 of the black beans.
bowl place one layer of lettuce, green
pepper, 1/2 black bean mix and corn.
Slice the second tomato and arrange the
slices on top and spoon the remaining
black beans onto the tomatoes. sprinkle
top with cheese.
Whisk together the
lemon juice, olive oil, garlic, salt and
pepper, pour 1/2 of the dressing over
the salad serve the rest on the side.
