Smoky Sweet Potato Mash Recipe

1-1/2 pounds sweet potatoes (3 medium)
1/4 cup butter, melted
1/4 cup firmly packed light brown sugar
1/2 teaspoon smoked paprika
1/4 teaspoon salt
4 cooked and crumbled bacon slices

Pierce sweet potatoes several times with a fork; arrange in a circle on paper towels in microwave oven. Microwave on high for 8 minutes, or until done; let stand for 10 to 12 minutes, or until cool to touch. Peel potatoes and mash with a potato masher until smooth. Do not use an electric mixer or food processor. Stir in butter, brown sugar, paprika and salt. Sprinkle evenly with crumbled bacon. Serve immediately.
Makes 4 servings.
